Probably one of the quickest and simplest terrine recipes out there.
A true French classic — pork & pistachio terrine is an evergreen of French cuisine.

Ingredients

• 500g pork shoulder, minced
• 250g chicken liver, cleaned and finely diced
• 125g pancetta or guanciale diced
• 100g shallots finely chopped
• 10g garlic finely chopped
• 1 tsp ground cloves
• 1 tsp ground nutmeg
• 100g breadcrumbs
• 100g pistachios
• 120ml brandy
• Salt, to taste

• Parma ham, to line the mould

🔪🤓
Method
• Prep all the ingredients and mix in a large bowl.
• Line your terrine mould with Parma ham and add the mix.
• Bake in a bain-marie at 110°C for around 45 minutes, until the core temperature reaches 58°C.
• Leave to cool at room temperature, then refrigerate and lightly press overnight.
• Remove the cling film and any fat or meat jelly around the terrine. Slice and serve, with some Mustard and Pickles.

Et, Voila! 👌

Enjoy! 🤤

Yes, I’m aggressively scratching that plastic chopping board with a serrated knife.

No, that’s not how anyone actually cuts food.
I’m doing it to speed-run years of normal use.

Because every single cut you make on a plastic board leaves a tiny groove. One cut? No big deal.
But thousands of cuts later… you end up with a surface full of scratches that love to collect moisture, food particles, and bacteria

The dramatic scratching in the video is simply years of wear… compressed into a few seconds so you can actually see what normally happens slowly.

Now here’s the part that usually starts arguments…

End-grain boards behave very differently. Instead of carving permanent trenches, the wood fibres separate and close back up around the knife edge
Which means:
- fewer deep grooves
- less damage to your knives
- a surface that can actually recover with proper care
Plastic boards absolutely have their place - especially in commercial kitchens where they’re constantly replaced.
But pretending a heavily scarred plastic board is somehow the gold standard for home kitchens…
Yeah… that’s a conversation people don’t always like having.
So no — I’m not starting a new hobby of sawing chopping boards for fun
I’m just showing you what your knife has been quietly doing to plastic all along.

Alright… comment section, your turn.

My greediness and lack of patience didn’t let me rest it… but HERE WE GO 😅🥩✨

Also, How sexy does it all look on that BOARD! 👨‍🍳😎

🍖Beef Wellington:
because regular steak just wasn’t dramatic enough. 🔥

Did I slice into it too soon?
Yes.
Was it freaking tasty? ALSO YES! 🤤

🔥 Beautiful sear
🍄 Savory mushroom duxelles doing their thing
🥓 Prosciutto shield against soggy bottoms
🥬 Spinach & chive crêpes adding that fancy little layer of flavor
🥐 Golden, flaky puff pastry blanket
Crispy outside. Medium-Rare pink center.

Main character energy. 👑🥩
Was I impatient? Absolutely.
Was it still iconic? 100%. 😌✨
Next time we rest.
…Maybe. 😏

🔪But your cutting board is sprinkling microplastics on dinner 😅

Plastic boards shed over time → you eat it 🤯

Estimated intake? ~50g/year
Wooden boards are safer, longer-lasting, and knife-friendly 🪵✨
