If there had to be a singular insider's Sake that had nothing to do with how inaccessible or how difficult it was to get hands on, but instead squared centrally on just how innovative the Sakes are - it indisputably has to be Tamagawa Sake (玉川). The Kyoto-based Tamagawa Sake from Kinoshita Shuzo in fact focuses on the use of ancestral Sake-making methods from the use of spontaneous yeasts via the Kimoto or Yamahai methods of producing the yeast starter, to the multi-year ageing of Sake before release. What then might be rather surprising is that its toji (the head brewer) is the Birmingham-born, Cornwall-raised and Oxford-educated British Philip Harper, who is also the first non-Japanese to be appointed a full fledged toji.⁠

When Harper had first arrived at Kinoshita Shuzo in 2007, the brewery had primarily only sold its Sakes to customers that lived no further than a 5 mile radius from the brewery - this was a major concern considering the brewery's own remote location. With the support of Kinoshita-san, Harper overhauled the entire brewery, from securing days off for the team which quickly boosted morale, to acquiring new equipment and designing new and unique Sake that would find more customers nationwide and beyond.⁠

For Harper, two of the most interesting and also under-explored aspects of Sake-making was the use of time and temperature, with also the belief that it was time for ancestral Sake-making methods to be revived - producing Sakes with nothing more than rice, koji and water and using the Yamahai and Kimoto method, both of which involve time intensive and laborious efforts to spur the spontaneous inoculation of wild ambient yeasts residing in the brewery. ⁠

“We make sake like it was made 200 years ago. If you parachuted in some sake maker from 300 years ago, he would understand what we’re doing here – apart from the electricity. It is often said that Sake is at its peak when, and best drunk, young. However, we at Tamagawa think of freshly pressed sake, fun though it can be, as simply the starting point of each sake’s journey. Tamagawa Sake is [thus] a work in process." ⁠

No, we didn’t plan to open another shop. But here we are. 😆

Last week we were scraping paint, waiting for licence approvals and wondering if opening another shop was yet another questionable life decision.

9 years ago, we opened Temple Cellars without much of a grand plan. Since then, we’ve survived a pandemic, moved shops, questioned ourselves more times than we’d like to admit, and somehow kept going.

Along the way, we’ve poured a LOT of wine, beer, sake and zero-alc; discovered growers who became friends; hosted tastings and events in our spaces and with good friends; and watched customers become friends, and friends become part of the Temple Cellars family.

And now, there’s Tiong Bahru. It’s tiny, but we’re excited.

Because we’re still curious, still learning, still hunting down great bottles, and still convinced that drinks are best enjoyed with good people around a table.

So, genuinely, thank you. To everyone who’s bought a bottle, joined an event, collaborated with us, recommended us to a friend, or simply stopped by for a chat — you’ve made these nine years what they are.

We’re still here, having fun and making questionable decisions. See you in Tiong Bahru soon.🍷

If you’ve only recently found us through our tiny new Tiong Bahru outpost, hello! 👋

We thought we should probably mention that Temple Cellars has actually been around for a little while. Nine years actually.

Our first home is tucked away in Binjai Park, Bukit Timah, and unlike our tiny Tiong Bahru sibling, the OG has a little more room to breathe.

We’ve got a walk-in wine cellar with plenty more bottles to explore, beer fridges, a sake selection for when wine isn’t quite the answer, plenty of zero-alcohol options, and of course, lots of minimal intervention wines.

So if you live around the area, fancy browsing a few more bottles, or simply want more things to drink, come visit us in Bukit Timah.

We’re dog friendly too. 🐶

We’re calling it a soft launch for our wine bar + bottle shop, which is a polite way of saying we’re still figuring a few things out 😬
