Pretty food has a very busy backstage.

For Priya @tashasharmaburdett and Dan’s two-day celebration, every part of service had its own rhythm: chaat bowls assembled in batches, canapés finished just before leaving the kitchen, rice plated hot and the buffet kept moving.

The cooking matters, of course.

But at a wedding, timing is an ingredient too.

A taco at an Indian wedding? Absolutely.

These chicken tikka tacos were served during Priya @tashasharmaburdett and Dan’s wedding celebrations—crisp shells, spiced chicken, chutney, fresh toppings and plenty of colour.

I love creating wedding menus that stay true to Indian flavours without insisting they must always arrive in the expected form.

Would these make it onto your canapé menu?Let us know in the comments.

Before the wedding-day canapés and plated dinner, there was this.

Priya and Dan’s Mehendi meant pani puri shells lined up across the counter, samosa chaat dressed one bowl at a time, chutneys everywhere and a hot buffet that people kept coming back to.

It was the first of two days I catered for them—and the two menus couldn’t have been more different.

This was the one with chutney on fingers, food eaten between conversations and plenty of second rounds.

The photographer asked me to look up.

Apparently, I managed it for exactly one photograph. 😂

This was midway through assembling rows and rows of samosa chaat for Priya @tashasharmaburdett and Dan’s Mehendi. Weddings look wonderfully calm once the food reaches the guests.

Behind that moment: chutneys, garnishes, timings, a very focused team—and me trying not to lose count.

I did go straight back to the chaat.

There’s no smoke without fire….

Since I was a boy the musical flame I’ve held up highest is for Frank Sinatra - ‘Ol’ Blue Eyes’ ‘The Voice’.
As I’ve got older that fire inside for his music has never faded, it has become part of who I am, and I wouldn’t change it for the world.
What would life be without music?
It doesn’t bear thinking about.
Let’s have a big high five for Frank 🙌🏻

Thanks again to @th3photographer for the smoky pic of me. Hope you don’t mind my mashup 😉
