What started with Thea Bryson baking bread at 3 a.m. in her apartment has grown into a beloved bakery and, now, a new Saint-Henri sandwich shop.

Four years after starting @miette_boulangerie, her new project brings the same slow-crafted philosophy to a faster format. In a city stacked with hoagies and deli classics, Bryson’s carving out something different: homemade grab-and-go comfort food that feels as good as it tastes.

That means 48-hour-brined chicken, beet gravlax cured in-house, sunflower hummus made from scratch, and attention to detail down to how each sandwich is wrapped and cut.

"Employees from the sandwich shop ask why we do it this way, and I simply say it's because we want it to taste better," Bryson says. "There's a reason why we don't use cured meat or cold cuts—we want to work with whole roasts and we want to add something different than what Montreal has seen for a while."
