Had a magical day exploring Sacramento on Friday with this awe-inspiring human who I’m lucky enough to call my son 🖤✨ Took a much-needed day off for some ice cream, Pokemon shops, guitar stores, and great conversations & quality time together. Love you so much, @russellwatsonguitar. So very grateful for this life together.

Fall Equinox is almost here & it’s Pumpkin Season, ya’ll… and this Virgo is SO happy about it 🍁🔥 Satisfy your hankering for Fall spice flavors with this easy, healthy & delicious recipe for Vegan Pumpkin Bread that I created!🍂🧡 (and yes, photographed … I’m contemplating a Watson Ranch cookbook. Because music heals, AND food is medicine! Stay tuned!)

Anne’s Easy-Peasy Vegan Pumpkin Bread (With No Refined Sugars!)

🔸⅓ cup melted coconut oil
🔸½ cup pure maple syrup
🔸 ½ cup applesauce
🔸1 cup pumpkin purée
🔸¼ cup non-dairy milk (I prefer almond milk)
🔸2 tsp Pumpkin Pie Spice
🔸1 teaspoon baking soda
🔸1 teaspoon baking powder
🔸1 teaspoon vanilla extract
🔸½ teaspoon sea salt
🔸1 cup sifted AP flour
🔸¾ cup sifted Whole Wheat Flour
🔸¼ cup Pumpkin Seeds, for sprinkling on top.

DIRECTIONS ⬇️

1️⃣ Preheat oven to 325ºF (165ºC)
2️⃣ Grease & line a 9×5-inch loaf pan with parchment paper.
3️⃣ In a large bowl, whisk the oil and maple syrup together until creamy.
4️⃣ Add the applesauce and whisk until blended.
5️⃣ Add the pumpkin purée, non-dairy milk, pumpkin pie spice, baking soda, baking powder, vanilla & salt - whisk to blend.
6️⃣ Then fold in the sifted flours, just until combined.
7️⃣ Pour the batter into the lined loaf pan & sprinkle pumpkin seeds over the top.
8️⃣ Bake for approx. 45 minutes, or until a knife inserted into the center comes out clean.
9️⃣ Let the bread cool in the pan for 10-20 minutes, then remove, slice & enjoy!

Just a heart full of SO much Love & gratitude this morning. 🙏❤️@russellwatsonguitar starts 7th grade today … the last of the grapes were harvested this morning… another season has come & gone, and a new season is underway.
