The no touch/lazy girl method.

I might offend the real bakers, but the last few times when I baked bread, I tried to keep my hands and kitchen counter as clean as possible. I skipped the stretch & folds this time as well, and the bread didn't disappoint. I actually found today's loaf to be quite photogenic 📷

I try to bake 2-3 loafs of bread each week, because the kids love it and eat it for lunch at school 🌟 love my new hobby 😋 Did you discover new hobbies in 2024?

Have you ever squealed a little with excitement when you lifted the lid on your Dutch oven and found that your loaf turned out even better than you anticipated?

That happened to me with this loaf. Eek! I really love how it turned out!! And it went to the most lovely, deserving friend. ;)

Key to this one: start without a plan, and just go for it! 😂 literally started with no plan but “flower”…

The 5 min score really helped this loaf’s expansion score. But I actually did 10 min expansion on it cuz it’s such a large loaf.
Pro tip: play around with your timing and your temp til you get it right for your bread, your oven, your method! :) I’m still adjusting on the go sometimes!!

Inspired by my cheerful yellow @wildclementineco reusable dish cover for this floral scoring! :)
I dare you to score a loaf inspired by your bread cover! 😏

True story about why there’s no expansion score on this loaf: I planned to do five minute score on this loaf, but within three minutes of putting it in the oven, I realized what time it was, and that I had to be somewhere to pick a child up in five minutes… So I gave my husband instructions to take the lid off when the timer went off, in case I wasn’t back in time, and then gave it up for lost… I figured the loaf was definitely going to burst and the design would be ruined. Well, it did burst, but only a little bit. I was so happy that most of the design stayed intact! :)

Always surprising us, that sourdough… 😏

How gorgeous is that blue?! 😍 maybe if I had put flour under it it might’ve stayed a bit more blue… not sure. But it looked pretty cool in black too. :)
Have you ever used blue spirulina powder in your loaves? Once I put it in the dough… it was kinda pale, but it made a pretty blue dough! :) you’d have to scroll down a long way to find that loaf. 😆
Also!! Thank you Felicia @sourdoughgrammie for the brilliant idea of oiled parchment for my stencil. How had I not seen that or thought of that before?? So smart and it worked perfectly! 🙏🏽

Ok @marielesterbaker I tried the #ricracscore!
I don’t know if you can tell from this sped up video but I was so nervous about where to place each score. 😅😅😅 and I kept adding more because I really didn’t want it to burst anywhere. 🤷🏽‍♀️ but as we know, sourdough has a mind of its own and it burst anyway. 😆 looks kinda like a road down the centre of the loaf. Haha. Maybe I should try one more time.

Last loaf’s twin. :)
We finally hit winter around here. It’s so offensively cold (for these parts… If you’re from somewhere else you might make fun of us… :). My starter isn’t happy. I had to put it in a slightly warm oven to get it going today! Wish I could put myself in a slightly warm oven to get going today… 😏

I tried something. Did you catch what I did differently?

Probably impractical for making many loaves all the time, but once in a while, if I have the time… I did the expansion at 7 minutes of baking, but it didn’t feel clean or satisfying so I did another score after five more minutes. that extra score made the loaf so clean cut and beautiful!!! Have you ever tried doing two 5-minute scores??

Y’all wanted to see how the loaf turned out with the @wayne_caddy shaping method (@birdysbread style where I didn’t double check how many times to do it 😬😁) so here it is! Higher hydration than my usual loaves… I haven’t mastered the high hydration lovely oven spring. But this loaf looks good so far! Crumb shot incoming later today. :)

I finally did it and guess what? It's absolutely the BEST investment in my sourdough journey! Thanks to the @thebreadmat, I no longer waste parchment paper or deal with cutting up perfectly round shapes to fit my Dutch oven.
