The NY Strip is the complete steak: both beefy & nicely textured. @thedynamoroom does it particularly well. They dry age Kansas City beef for 30 days. A hard sear gives it a perfect crust. Bites are crunchy, then juicy... It comes with garlic and the table is full of sides - but it's a delight on its own. If that were all we had, we'd call it one of the best steaks around...

...but this is @dboccagno in the kitchen, so there's much more going on. We loved his very different menu at Cafe Chelsea too. He cooked at Atera before that. His menu is focused here on steaks and the like, but he dives deep, bringing out the best in the category. Here's our menu:
- the filet mignon with a rich beurre blanc butter & onion rings - the ideal contrast to the Strip. Delicate, elegant, well served by the flavor boosts that accompany it.
- Crab cake, fat & meaty, with nice crunch & classic tartar sauce
- Marrow, listed as an app but great as a side with the steaks. Yes, of course I do combo bites with marrow & Strip.
- crispy French fries (because we already had onion rings with the filet)
- creamed spinach that tastes just enough like spinach to make it count as a veggie
- Briny steak tartare with yolk & chips
- Old school desserts: brownie sundae & cookie sandwich.

These are steakhouse classics, done better, with top notch ingredients and a real attention to detail. Last time I was here, it was packed with Harry Styles fans; this time, with business lunchers. So, the vibe has shifted - but it still feels fun and lively. It's a great spot. I'm a big fan.

Another fabulous dinner at @thedynamoroom ! SUCH a lively fun atmosphere I went 530 on a Wednesday night & it felt like a Saturday night 💃 They have new fall menu highlights (I got the bread basket, croquettes, and gnocchi) You 100% need to save room for dessert & is there anything better than sides at a steakhouse !!?

The Dynamo Room’s burger was truly dynamite 🧨 especially the au jus to dip it in. The jumbo sized matchbooks are also right at the hostess stand!

What do I do when I have an extra t-bone steak cartoon? I make up a beer name, and put the t-bone on a can illustration. How about a beer paired with those steak occasions? Outdoor grilling time? It would be great with carne asada too. This would be a bright, malty Helles-style beer. It’s also Oktoberfest time. I’m thinking a Helles with bratwurst. And potato salad. And some sauerkraut. #helles #munichhelles #steak #beerpairing #hellesBeers #rubberhosecartoon #CraftBeer #coloradobrewery #beercan #beerbranding #beerdesign #merchdesign #packagingdesign #illustrationstudio #designstudio #graphicdesignstudio #coloradomade #coloradobrewery #beersign #craftbeer #craftbrewery #germanbeerstyle #logodesign #popart #brandingstudio #labelart #popart #lowbrowart #galleryartist #galleryart #denverartist #boulderartist #octoberfest
