A little moment from our gather in the forest last week. ✨

Long tables set under the trees, wildflowers from the lane, linen, jars, and candlelight.

no fuss — just good people, seasonal food, and the woods doing most of the decorating for us.

Thank you to everyone who came

The tables are set. The forest is ready.

Our long table gather last week — seasonal, slow, and outside where we love it most.

THIS is why we love what we do. 🌿
Gather in the Forest didn’t begin when the first guest arrived at Ballyhoura Farm Escape. It began days earlier on the road, travelling through the magnificent Golden Vale. Collecting ingredients, visiting suppliers, and meeting producers firsthand is what inspires us.
The region gives us an extraordinary natural larder—from Hanleys beef and local craft beer to fresh vegetables, fruit, and honey. But more important than the land are the people behind it.
Our menu celebrated this community, featuring Eight Degrees Brewing, Drumroe Honey, Open Hearth Organic Farm, Ballyhoura Apple Farm, Galtee Honey, Kerrygold, and Mossies Fruit & Veg, alongside West Cork friends like Toonsbridge Dairy, The Real Olive Co, and Gubbeen Smokehouse.
Then came the magic. A long table beneath the canopy, plates being shared, and conversations flowing as fairy lights flickered to life. In that moment, the hours of prep disappeared. What remained was great food, great people, and a shared experience in a very special place.

Another pairing from Simple Two @ottolenghi @verenalochmuller

Chaya’s Saffron Yoghurt Bake and Roast Cauliflower Wedges with Romesco

Colours, textures and flavour made for this incredible with plenty of leftover romesco sauce to repurpose.

I had some hake (any firm fish will work) and a cauliflower which needed using up. I’m a real fan of cauliflower with any kind of sauce but the deep pigment of this pepper & tomato red made for such glamour on a plate.

Nothing easier than cutting up wedges of crunchy cauliflower and roasting them only to be adorned in a blitz of charred red pepper, tomatoes, maple syrup, sherry vinegar, garlic oil and a little mixture of blanched hazelnuts and toasted/crushed cumin 💋

For the hake ‘bake’, Greek yoghurt was mixed with a warmed fusion of saffron water and garlic, covering the fish like a blanket before topping with lemon slices and thyme 🍋

Really, really good!

We’ve just received a lovely new order from Sarah & Olive, bringing some exceptional Spanish extra virgin olive oils to The Pigs Back.

As a food emporium, we’re always looking for products that are not only delicious, but made with care and of the very best quality — and these oils certainly fit the bill. From fruity and delicate to wonderfully peppery and robust, there’s an EVOO to suit every palate. 🫒

And it’s not just about the flavour! Extra virgin olive oil is rich in monounsaturated fats and naturally occurring polyphenols, and is a key part of the Mediterranean way of eating. Research has linked Mediterranean-style diets rich in olive oil with better cardiovascular health, particularly when olive oil replaces fats higher in saturated fat.

We also have a beautiful range of olive oils and balsamic vinegars from The Real Olive Company, so if you’re looking for something special to drizzle over a salad, dip with fresh bread, finish a dish or give as a foodie gift, come and have a browse. 🥖✨

📍 The Pigs Back, Douglas, Cork

Come in, have a look and let us help you find your perfect oil! 💚
