being a server at one of the best restaurants in chicago means being completely booked, every day - even at lunch - so i’m saying the same thing over and over again. it can get monotonous if you let it.

but i don’t.

i think about how difficult it is to get a reservation at monteverde, how excited people always are when they’re celebrating something or its their first time after FINALLY scoring that res.

how high the guests expectations are not only of the food, but of the service and experience - and i am constantly looking for tiny ways i can make that experience even better and more memorable.

i’m constantly refining the way i explain the menu, finding different adjectives to describe the flavors of dishes, asking the chefs for more details about the inspiration or story behind them. choosing my language intentionally with sharp precision and colorful descriptors. working to become as technical and full of knowledge as i am warm and full of personality.

hospitality comes more naturally to me than anything and to, what i like to describe as “put in a oerformance” each day, i know i’m contributing just a tiny part into a very special day for someone, and that’s why i do it. that’s why i continue to strive to get better, notice more details, make fewer mistakes, and always ALWAYS remember to put guest experience first.

even when people do act like it’s their first day on earth. let me guide you sweet little darling. let me take you to pasta land. @monteverdechi
