A little elbow grease never hurt anybody 💪🔥 Cleaning day on the drum smoker over the long weekend and this is exactly why we built in the access door. Makes it easy to get right down to the bottom without fighting the ash and grease buildup. Built for cooking. Built for easy maintenance. 👊 #DrumSmoker #BBQLife #SmokerCleaning #CustomBBQ #lewisbbqmfg

On behalf of the Rolly View Community Association and Lewis BBQ Manufacturing, we would like to extend our deepest gratitude to everyone who took part in this years event. We were beyond excited to have this years event Proudly Sponsored by Alberta Beef Producers…what an accomplishment for our little community! From our Title Sponsor, to our Tent Sponsor, to our Table Sponsors, to our Entertainment Sponsors, to all our In-Kind Sponsors, those who donated silent auction items and door prizes, and those who joined us at the Dinner, you are what made this event such a success! The funds raised will help with our Front Entrance Renovations, making sure our hall is inclusive for everyone! We could NOT have had this success without businesses and people like you, and please know our appreciation simply cannot be expressed into words. Thank you from the bottom of our hearts and we look forward to our 5th Annual Pitmasters Dinner on June 7th 2025, and we hope we can count on you to be a part of it once again! We couldn’t have done it without you!

Tater Tot Mexican Street Corn. For the Pitmaster Potluck on last Friday I put this tasty little appetizer together. Take a mint muffin tray and place 3 tater tots in each cup. Then bake at 425 for 10 minutes. Remove from the heat and use round ended kitchen utensil to gently press down to form a cup, I used the rounded end of a muddler to form the cup. Place the tray back in the oven again 425 , for 10 minutes. Remove from the oven and then fill with Mexican street corn mixture using a piping bag . Street Corn Recipe below. 1 pkg Cream Cheese. 200 grams of Sour Cream. 1 cup Old Cheddar Cheese. 1/2 Jalapeño Cheddar Cheese. 3/4 cup cooked chopped bacon. 1 1/2 cups char roasted Corn. 3 Tbsp fine diced Red Onion. 1 1/2 Tbsp Taco seasoning. 1 Tsp Tajin Seasoning. 2 Tbsp Hot Sauce. . After filling each cup with the Mexican Street Corn, top with a jalapeño slice. on top each filled cup. Place the muffin pan into your smoker at 275 for 15 -20 minutes. Grab a cold beverage and enjoy .
