Our roasted and brûléed sweet potato. We put a nice dollop of espresso aioli on the plate and finish with Cabot Clothbound, sumac, and some cress. A John’s classic.

John’s Food & Wine does things a bit differently. Diners order at the counter and pay a 20% service charge. Hospitality is considered for every hire. Their team is small and cross-trained, so on any given night a prep cook might serve you dinner. Most employees earn over $70K a year. And they’re constantly changing it up. It all adds up to a really cool way to run a business. Thanks for chatting with me, @adam__mcfarland and @thomasrogers3132 about how it all works, and congrats on your @foodandwine Restaurant of the Year win.

The lobster salad at @johnsfoodandwine has been on the menu since day one — and for good reason 🦞. Sweet lobster is layered over rich, almost nutty leek aioli, dressed with a punchy fish sauce and Thai chile vinaigrette, and buried beneath a pile of fresh herbs. In other words, it’s a dish you shouldn’t miss!

Make it at home with the recipe at the link in bio.
