Had this all the way back in March and i can still remember how some of the dishes tasted like. WISH I could experience this for the first time again. The most well-deserved 🌟🌟🌟from the @michelinguide !!

Huge thanks to Brett and the whole Ledbury team for an outstanding meal last weekend. We visited 10 years ago and were lucky enough to meet Brett, who gave us some great advice and lots of encouragement at the start of our journey with Taisteal. A real treat to be back again - thanks for everything, including this very special ornament!

Ein köstlicher Abend voller neuer Aromen mitten in London, Notting Hill. Wir starten die kulinarische Reise um 18 Uhr und verlassen das mit 3 Michelin-Sternen dotierte Restaurant um 23:30 Uhr. In dieser Zeit essen wir u.a. köstlichen Hummer, zartes Lamm und Holunderblüten-Kapern, welches das Team um Chefkoch @thomspencechef zubereitet. Der Abend endet mit einem Blick in die Küche und einem Foto mit der ganzen Brigade. Unbedingte Empfehlung: Wenn Du nach London reist, gönn Dir einen Abend im The Ledbury - es ist aussergewöhnlich!

Kalbsbries aus dem Limousin | Popcorn, Tamarinde, Sudachi und Vadouvan

Schottischer Hummer | Stachelbeere, Iberico Schinken, Safran und geräucherte Miesmuschel

Eric Taylforths Herdwick-Lamm | Englische Kirsche, Shiso, schwarze Gerste, Cobnus und schottische Pfifferlinge

Wildwachsende schottische Heidelbeere | Zitronenthymian, Veilchen, Lakritz und kambodschanischer Langpfeffer

44 % togolesische Schweizer Milchschokolade | Fromage Blanc, Aprikose, Sanddorn, Miso und Anyhoe-Honig

Der Brot und Butter Gang besteht aus fluffig, süßem selbst gebackenem Milchbrot mit Salz, einer gebackenen Schleife aus knusprigem Plunderteig, die mit Trüffel-Creme gefüllt ist und dazu ein Würfel Schafmilch-Butter, die mit Malz karamellisisert ist. Unfassbar gut diese Kombination - ich habe vorher noch nie Schafmilchbutter gegessen - finde ich sensationell! Man bekommt mehr davon, wenn man möchte - wir wollten!

On Tuesday I turned 30, a milestone indeed.

Looking back at the past decade in the kitchen; grateful for the people around me, all those who have guided me in the kitchen throughout the years and most importantly the incredible team at Dorian.
Grateful for the crazy list of industry legends who supported me and enjoyed our cooking over the past 4 years at Dorian and especially my amazing @taschdesignstudio

Very excited for the year ahead, with some special collaborations and projects in the works.

We celebrated in San Sebastián and Cornwall, starting off with an exceptional meal at Etxebarri which provided many things to note for the future.

Some highlights above, will add my favourite San Sebastián spots in the next post.
