Need something to do with some leftover grapes?

Try this 🌿Basil-Kissed Creamy Grape Salad 🍇

We had a lot of grapes leftover from Food & Wine week at the Spa and I wanted to use them up! I came up with this sweet, tangy & crunchy burst for an amuse-bouche before lunch service.

Super simple to make: whip up some cream cheese and sour cream of your choice. Here I used @tofuttibrands sour cream & @miyokoscreamery cream cheese. Mix in a little cane sugar & a dash of salt. Mix it in with the grapes(which you can cut in half or leave whole). This is preference since I topped it with basil. You don’t need to add any herb at all. Or you can switch it up and add mint, thyme or even tarragon! Mixing in herb adds depth and more complexity to every bite. The last toppers/garnishes are brown sugar and toasted pecans! Since you’re sprinkling brown sugar at the end - you can go easy on the cane sugar in the mix(unless you want it to be a sweeter treat) and top it off with the nut of your choice. I chose toasted pecans but you can add walnuts and/or almonds.

Don’t knock it till you try it! 😋 it’s a delightful surprise.

Tonight’s dinner is vegan chili with jalapeño popper ghost cornbread.

I had an idea of a spooky version of cornbread wherein I’d make ghosts out of cream cheese stuffed jalapeños. What I didn’t factor in was how the vegan cream cheese I used liquifies after being heated—perfectly fine in a sauce but not so great within a cornbread. 🤦‍♀️ The cream cheese melted and the eyes and mouths I cut from black olives sunk in, so I had to improvise new eyes and mouths. The cornbread was still tasty but not quite what I imagined.

Fall weekends + football season = bring on the comfort food. 🥔🍂🏈

This Loaded Baked Potato Salad takes everything good about a loaded baked potato and turns it into a creamy, crowd-friendly side that belongs at your next game-day spread, cookout or fall get-together.

We’re talking:
🥔 Roasted baby gold potatoes
🧀 Dairy-free cheddar
🥓 @mccormickspice bacon bits (yep, they're vegan!)
🌱 Green onions + fresh parsley
🥣 A thick, creamy dairy-free sour cream + mayo dressing with a little smoked paprika, brown mustard and apple cider vinegar

It’s creamy, smoky, salty, loaded with all the good stuff and very much not the sad potato salad sitting untouched at the end of the buffet.

Full recipe is up now at the link in my bio! 🌱

Tonight I wanted pizza! 🍕 Which was spot-on, because Sunday night I made pizza dough with my sourdough discard, using this recipe from Little Spoon Farm: https://littlespoonfarm.com/sourdough-pizza-crust-recipe/

Then some pizza sauce, Better Than Ricotta by Tofutti, Mozzarella Shreds from Daiya, Parmesan (shredded off the block! 🤗) from Violife, minced garlic via Badia Spices, Field Roast Plant-Based Pepperoni Slices, and fresh Basil from the garden. 💚😋 Shout-out to Vegan Essentials, for being an amazing online depot to get all of my vegan essentials, like these! 👍 ❤️

Tonight’s dinner is Red and Green Enchiladas with refried beans, southwestern style rice, and salad.

I veganized a basic recipe I found for red and green enchiladas (enchiladas “Christmas style”) by using soy curls instead of chicken and vegan cheese. I really liked the texture of the soy curls in the enchiladas and I was pleased by the two different kinds of enchilada sauces. This was a fun dinner.

Last night’s hyper-seasonal family dinner on the deck 💚. We are making the most of the “second summer” days and enjoying outdoor dining until it gets too cold ☀️. Here’s all the vegan goodness:

1. Crispy smashed potatoes two ways: vegan pesto (basil, pine nuts, garlic, lemon, nutritional yeast) and Calabrian chili with sundried tomatoes and roasted red pepper. My basil plant is (surprisingly) still going strong 🌿. This is my favorite way to potato, delicious!

2. @tinytina429 made this bruschetta with a layer of seasoned vegan cream cheeze and heirloom tomatoes from @wilsonfarm and basil. Yummy appetizer!

3. Creamy vegan corn chowder, recipe via @nora_cooks_vegan_ 🌽. A super scrumptious way to enjoy sweet summer corn, it hits every time 💛

4. Saucy butter beans, in the style of the famous baked feta pasta, but with @violife_foods vegan feta and tomatoes from @wilsonfarm. I didn’t follow a recipe on this one but it turned out great! Tangy umami savory beany goodness 🫘

5. Simple salad with more beautiful heirloom tomatoes from @wilsonfarm and a bean salad mix made by my Mom 🍅. Those magnificent tomatoes have some of the most vibrant red interiors I have ever seen! What a contrast with sad grocery store tomatoes!

6. The full plate, including grilled corn, grilled mixed broccoli and red onion and peppers, sourdough bread, and an Asian-style noodle slaw/salad made by Cousin Susie 💚. Not shown because it got dark before we ate it is dessert: my sister made a fantastic vegan apple crumble with apples we picked at @cnsmithfarm_ and I enjoyed it warm with a scoop of @oatly vanilla ice cream 🍎🍏🍨 What a perfect meal! #vegan #plantbased #eatseasonal #farmtotable #veganfamilydinner
