So about Sunday.

A new guest chef to the H Club. We had the team from @maurocolagrecolondon at Raffles London at tye OWO.

Michelin cooking at its finest. This was a big one for the team and myself this week. After a few full on weeks we finished with some truly stunning dishes. All very complex, sticking and full of flavour.

A massive thank you to @leoaag and the team for helping with service on Sunday along with my team how dug deep to be able to execute this cuisen in the H Club. All my time at the stadium I don’t think we have cooked at such a high level.

Now we have a calmer week before back for another run of 3 home games, with 2 returning guest chefs.

Is this the longest potato I’ve ever made? No, the Japanese long fries were (IKYK), but these definitely took a while. This was my attempt to recreate a very tasty dish from a supper club earlier in the week.

The potatoes were thinly sliced then layered in a rosemary, lime and garlic butter. Oven roasted on veryyyy lowwww, refrigerated overnight and then cooked again. I did an air fryer version, deep fried version and then an oven roasted one. Deep fried was probably the best result but definitely gonna require a lil more practice. Shoutout to my bestest brother ever @tottenhamchef for the tips along the way 🐐💖

This time 2 years ago I was wrapping my first ever cookbook shoot. It wasn’t easy, i was scared, nervous, and juggling my full time job. It was all completely new to me, but I did it. In the run up to the shoot, I was told no and ignored so many times by photographers who simply didn’t want to work with me because I was self-publishing. My old agents even said to me that ‘I probably wouldn’t sell many copies’. And that I ‘shouldn’t get my hopes up.’

2 years later, we’ve sold out🥹

Thank you to each and every one of you who have supported me on this journey. It means so so much. Thank you to @clarelewington for your gorgeous photography and @poorhouse_studios @ess_west @tottenhamchef for helping me bring my lil dream to life. Even though my baby CRISP 💖 will not be coming back in physical form, the e-book is still and will always be available (link in bio)

I’ve also been very busy 🐝 working on something VERY exciting where you’ll be able to access ALL and I mean ALLLLLL my recipes very soon. Hope you guys are excited because I am 🥹✨🥰
