Raw agave stores its energy as inulin, a complex carbohydrate that yeast can’t easily ferment. Slow heat breaks it down into natural sugars, which is why agave has to be cooked before it can become a spirit.

In the mountains of Jalisco, that cooking happens in an above-ground adobe dome. The curved walls soak up the heat and radiate it back from every side, cooking the agave evenly and gently. That igloo shape is the signature of mountain raicilla.

At El Viaje, the raicillero lights the fire at 2:00 am, so it has time to burn down and heat the adobe walls before the agave goes in that afternoon. Hand-harvested Agave Maximiliana, grown for 8 to 10 years, gets layered inside, then the oven is sealed shut with mud and left to cook for three days. From there, the roasted hearts move to seven days of wild fermentation with native microbes, then off to a double distillation.

Rooted in a rich agricultural tradition, the Salcedo Rios family have long been intertwined with the earth’s bounty.

Under Benito’s innovative leadership, they set out to cultivate and harvest Agave, channeling their ancestral wisdom and passion into the art of Raicilla production.

From pop star to actress, @agnezmo is entering a new chapter. In conversation with Schön!, the Indonesian performer opens up about stepping into Reacher, letting go of her perfectionist instincts and learning to embrace a different kind of vulnerability on screen. She also reflects on the gap between Agnez Mo the public persona and the woman constantly evolving behind it - and why, after years of keeping her work to herself, she is finally learning to let go and take creative risks.

To reach Mascota, you need to climb. A two-hour drive from Puerto Vallarta and four thousand feet of adventure up into the Sierra Madre of Jalisco, where the coast disappears and the air turns cool.

The Tecos named this place long before the Spanish arrived: the place of deer and snakes. Today it’s one of Mexico’s Pueblos Mágicos, all cobblestone streets and an unfinished 1897 cathedral left open to the sky.

Years ago, an engineer left a career in big spirits and followed raicilla from Alabama to these hills. What he found was a spirit families had made here for centuries. That’s where El Viaje came to life.

Maestro Raicillero Benito Salcedo Ríos and his jimadores are in the agave fields before the sun clears the Sierra Madre.

By hand. By feel. By first light.

Agave Maximiliana is the only agave in El Viaje, and it takes eight to ten years to mature. Those extra years are where the sugars build, and where the flavor comes from.

We heard summer’s ending. We’re choosing not to participate.

For every Agave Maximiliana we harvest for El Viaje, another goes back into the earth.

Maestro Raicillero Benito Salcedo Ríos plants them himself, on his family's farm in the Sierra Madre.

He keeps the native land wild where big producers clear it, and tends every plant with all-natural pesticides, so the land around it stays alive.

The earth gives, and we give back. As it should be. ♻️

High in the Sierra Madre of Jalisco sits a village called El Mosco. The agave grows wild here, and the hands that tend it have for generations.

This is where El Viaje, the journey, begins.

The Sierra Madre makes its own rules.
Raicilla is one of them.
