Euer Major 🤠

On Sunday there was lemon cake "Level Hardcore" - you can see it for yourself in the photo ... like a mushy brownie only in lemon 🤤 you have to like it - if this is the case = DREAMY. To go with it (to counteract the acidity) there were strawberries with a white chocolate coating. This cake will definitely be made again and then I will document the preparation - personal test passed 👌

tasty little crepe breakfast! 🥞 I used the @farinupusa crepe mix
- added some semi-sweet chocolate chips inside
- combined chocolate chips and butterscotch peanut butter from @capemaypeanutbutter for a drizzle on top
- added shaved white chocolate
- topped it with some PB chips

Couldn't decide if I preferred my Butternut Squash Soup thicker or thinner... So I did both! 😋

👩🏻‍🍳 RECIPE:

✴️1 large butternut squash (about 1 1/2 pounds)
» Preheat oven to 375°F. Cut butternut squash in half and place halves, cut side up, in a foil-lined, shallow baking dish and cover them tightly with more foil if the squash isn't already chopped and cubed. Bake for 30-50 mins until it's easy to cut with a knife. Scoop out and set aside.

✴️2 tablespoons olive oil/vegetable oil, or butter
» Heat about half the oil or butter in a soup pot.

✴️1 large yellow or sweet white onion, chopped
» Add the chopped onions to the pot of heated oil/butter and sauté over medium-low heat until golden, about 8-10 mins.

✴️ 2 cups prepared vegetable or chicken broth, or 2 cups water with 1 vegetable or chicken bouillon cube

✳️Optional:
The following adds a bit of extra depth and sweetness to the dish
✴️1 medium apple, any variety, peeled and diced (Granny Smith apples work well with this recipe) ✴️1/2 large carrot
» Chop apple and carrot into smaller pieces, then add the apple, carrots, squash, vegetable or chicken broth and spices to the pot of onions.
✴️ 1 tbsp of peanut butter

✳️ Add optional ingredients to pot:

» Bring to a steady simmer, then cover and simmer gently until the apples/carrots are tender, about 10 minutes.

✳️ Optional:
✴️ 2 teaspoons good-quality curry powder
✴️ 2 teaspoons grated fresh or jarred ginger, or more, to taste
✴️ Pinch of ground nutmeg or allspice

» Transfer the solids to a food processor or blender in batches if necessary, and process until smoothly pureed. Then transfer back to the soup pot. Or insert an immersion blender into the pot and process until smoothly pureed.

✴️ 1 14-ounce can light coconut milk
» Stir in the coconut milk and return the soup to a gentle simmer. Cook over low heat for 5 to 10 minutes, until well heated through.

✴️ Salt and freshly ground pepper to taste
» If time allows, let the soup stand off the heat for an hour or two, then heat through as needed before serving.

✳️ Optional:
» Garnish with sour cream, chives, pepper, and freshly grated parmesan cheese

Voila! Finita!

🍝Vegan Ragu Sauce
portobello mushrooms (soked in hot water for 10 minutes, drain and keep juice for cooking)
english chestnut mushrooms,
celery, 3 sprigs
one carrot, chopped
one beef tomato, cut to pieces
few garlic, sliced
chopped tomato, 1 tin
tomato puree, 1 tin
fry all of them together in olive oil until soft then add the juice of portobello mushrooms and
3 bay leaves,
Italian herbs mix, some
red wine, up to you 😜🍷
Leave it to simmer for an hour. It is that simple. Add tofu if you're a tofu fan like me.💚
🌱Garnish with freshly crushed basil - I couldn't do without it,🌱
just like @fairlytasty
😁Choosing a healthy option to eat is not hard, but very important. The reason is in the word 'healthy'. Don't waste the chace life is offering you.
