Josh Harris is not only the founder of the Bon Vivants, a spirits marketing and trade advocacy agency, as well as the owner of internationally recognized cocktail bar Trick Dog and the new casual Quik Dog, but a San Francisco native giving back to his hometown. We spent a while reminiscing about his days developing his skills at legendary SF spots like Postrio and music oriented Pier 23, and cheating his way into hospitality (things in SF were still pretty loose back then!). He took all of that into Trick Dog, even sharing his love of music with an early vinyl only menu, and he continues to innovate spirit free cocktails and the thinking around them. Link to listen in bio!

Yesterday we welcomed the team from @trickdogbar to Aedan Koji Kitchen for an educational and tasting session all about koji!

Together, we explored what koji is, how it’s made, its role in Japanese fermentation, and the many ways it can be used to create new flavors and possibilities in the kitchen and behind the bar.

We hope the session sparks inspiration for their future menus and gives everyone a little more knowledge to bring into their everyday lives, too. Sometimes, learning about a traditional ingredient opens the door to entirely new ways of creating.

We love sharing our knowledge, learning from one another, and building connections with local businesses. Thank you to the Trick Dog team for spending time with us! #trickdog #aedanfermented #miso #koji #aedan

Last Friday, some of the younger members of the Aedan team stopped by Trick Dog to explore their current menu!

They tried a few of their creative cocktails and food offerings, and the Undertaker, featuring our Sauce of Nostalgia, was the group favorite. They were also generously given a round of Iron Claw shots on the house to try as a suggested pairing with the Undertaker. There are plenty of options to explore, including non-alcoholic drinks, so there’s truly something for everyone.

Trick Dog’s menu changes every six months, so if you’re curious about the Undertaker or any of their other creative drinks and dishes, we recommend stopping by while you can! They’re close by and open from 4 PM.

We love supporting our local businesses and building partnerships with our neighbors. Thank you, @trickdogbar, for having us! #miso #missiondistrict #aedankojikitchen #trickdog #sanfrancisco

🐢🍹 BABY TURTLE

Some cocktails are worth circling back to.

This one comes from @trickdogbar in San Francisco, and every time I revisit it, I’m reminded just how damn good it is.

Reposado tequila brings the warmth, grapefruit + lime keep it bright, Campari adds that little bitter edge, and cinnamon syrup somehow ties the whole thing together. Add that silky egg-white texture and a dusting of fresh cinnamon… 🤌😘

RECIPE
🥃 2 oz Reposado tequila
🍋‍🟩 ¾ oz fresh lime juice
🥚 ¾ oz egg white (or aquafaba)
🍊 ½ oz fresh grapefruit juice
✨ ½ oz cinnamon syrup
❤️ ¼ oz Campari
🧂 2 dashes 20% saline solution

Garnish with freshly grated cinnamon.
