IKEA, the Swedish furniture and home goods store, is set to say hey — or “Hej” in its native language — to Tulsans starting Friday. Grand opening events start at 8 a.m.; grand opening hours for the store are 10 a.m.-8 p.m.

The 51,000-square-foot store has plenty to offer. The Tulsa World got a tour of it Wednesday morning.

Some dishes don’t need reinventing. They need respecting.

This is lobster bisque the way I learned it in 1997 — my first real kitchen, Bodean Seafood. Still a fine-dining staple in the town that raised me. The method comes straight from Escoffier’s playbook. Lobster stock from scratch. Puff pastry baked over an old-school Lion’s head, so you crack through that crispy, crunchy carbohydrate and hit a bisque that bursts with flavor.

Here’s what I believe as a chef: you don’t get to be creative until you’ve earned it. First, you learn the traditions. The fundamentals. The original thought process of the historical chefs who built this craft — Escoffier, Larousse. Then you put in your 10,000 hours. And maybe — if you’re lucky and driven enough — you earn the right to put your own spin on it. Only when the guest benefits. Sometimes it’s needed. Sometimes it’s not. Knowing the difference is the whole job.

I thank my lucky stars every morning for Escoffier and my wife. Him for the recipes. Her for the mind and the editing genius that turns 22–30 seconds of my cooking into something worth watching.

Classic. Perfect. Hard to change. Harder to want to.
