@spivacooking bird blend + @fosterfarms turkey roll equals my favorite #thanksgiving meal!! Sam invited a few friends to have a friendly turkey/bird blend/thanksgiving contest and this is my cook!! We injected with a butter/bird blend mix, seasoned and then cooked on the @webergrills over the amazing @hardercharcoal my @meatermade kept perfect track of the temp. Got a late start to the cook so had to adjust dinner plans but it was amazing!! We added @spivacooking spud rub halved tri color baby potatoes and Trufflicious green beans for a complete Spiva dinner!!

First.....Like and comment. Second......go to my link https://spivacooking.com/Shop/ref/Djsteiny/

Ok, I got invited to participate in a little competition and use @spivacooking Bird Blend. If you haven't used anything spiva, then now is the time, and this is the spice blend to start with.

I tried something new for me with this cook. I used this Bird Blend before, and it definitely brings the flavor. First, I started by injecting it with butter and Bird Blend. Then, I cooked this 13lb turkey in the oven at 475 degrees. It was in the oven for about an hour to get the temp to 157. I removed it and rested it until the temperature rose to 173 degrees. Yes, the turkey looks overdone on the outsid, but my injection of butter and the bird blend kept this bird juicy and delicious.

I decided to make Thanksgiving turkey sandwiches with it. So, I used mayo and Bird Blend to spread on the bread, and then i layered stuffing, turkey, gravy, and some cranberry sauce. This sandwich was absolutely amazing. The combination of Spiva Bird Blend mayo wth the turkey, stuffing, gravy, and cranberry sauce should not be passed up. Try it this Thanksgiving. You will not be disappointed.

So this is kinda still Sunday Burgers. I mean, it's meat and a bun, so I am counting it. These hot honey fried chicken sandwiches were off the charts good.

I started by deboning and taking the skin off of some chicken thighs that were on sale. I know I can buy them that way, but where is the fun in that. I seasoned the chicken with @blackbeardsspice Calico Jack. I then set up my dredging station. I mixed up some eggs and @melindasfoods pizza hot sauce. There is no heat but so much flavor. For the dry, I mixed bread crumbs and more Calico jack.

Once breaded, I pan-fried the chicken at 350° until they had an internal temp of 185°. I toasted a brioche bun and topped with the crispy chicken, @mikeshothoney, and pepper jack cheese. Like I said earlier, these were so good.

Shrimp and grits are a southern staple that I have grown to love. Spicy shrimp paired with cheesy and creamy grits is a perfect combination. Let me tell you how I made these.

I started with seasoning the shrimp heavily with @blackbeardsspice small batch rub. I seared them hot and fast in a little olive oil and pulled them off the heat when done.

I cooked the grits in chicken stock and let them simmer until thick and creamy. I added butter, cream, and extra sharp cheddar at the end, as well as salt and pepper to taste.

I made an andouille sauce to add to the dish by browning the sausage. I added bell pepper and onions to the reserved drippings from the andouille and let them soften. I added plenty of garlic and some flour to make a roux. Once the flour was cooked out, I added back the sausage. I poured in chicken stock and let it thicken to the right consistency. I also added @bearandburtons fireshire and more of the small batch seasoning.

I plated the grits and added the andouille sauce. I topped the dish with the blackened shrimp and garnished with green onions. The flavor on this dish was more than I can find the words to describe. I will definitely be making this again.

I made a quick pizza on my @recteq_official Bullseye for lunch. I stopped at @aldiusa this morning and picked up some of their pre-made pizza dough. I love making my own, but this stuff is pretty good.

I shredded some whole milk mozzarella and added some marinara to the dough after I stretched it. I topped with the cheese and added pepperoni and some chorizo I browned up.

About 12 minutes on the Bullseye at 400° and the pizza was done. This was a simple pizza. I didn't use any special equipment or white truffles. Sometimes good, simple ingredients speak for themselves.
