— UMAI // @umai.sg [invite]

From the team behind the popular @omote.sg, we got to try out their creative udon bowls.

Here’s what we ordered —
• Signature Miso Carbonara
A rich and creamy bowl topped with black pork, bacon and duck. The meat was so tender and really went well with the creamy, cheesy sauce.

• Mediterranean
Came with a really generous portion of eel, together with Kurobuta pork, squid and tiger prawn. The kabayaki oyster sauce gave the dish a nice savoury flavour, with the eel being the highlight.

• Niku Sukiyaki
This was surprisingly addictive! Despite the lighter colour, the seasoning was really flavourful and went nicely with the beef. A rather refreshing dish as it served chilled.

• Truffle Tako
The truffle smell was quite strong when it came, although the truffle taste was more subtle. The octopus was triple-fried and had a nice chew.

• Pari Pari Chicken
The chicken was crispy and coated in a honey soy garlic sauce. This was really packed with garlic, so definitely for those who enjoy a stronger garlic flavour.

• Charred Chicken Wings
Loved that these were boneless, which made them really easy to eat. Simple but good, with a nice tanginess from the lemon zest.|

• Kiwi Highball
A refreshing drink with a light kiwi sweetness, while the soda kept it crisp and easy to drink.

• Lychee Ginjyo Martini
Fruity and refreshing with a noticeable lychee flavour. Came with fresh lychees too, which was a nice touch.

Thank you to the ever so wonderful team for the invite & great service! 🤍

📍UMAI Artisanal Udon Bar (@ Guoco Midtown)

Nice weekend lunch with XCC and XYY at this rather casual udon place at Guoco Midtown :)

I don't usually opt for udon (though it's probably one of my fav kinds of noodles because it's thick and fat) but I knew this place was gonna be different when I saw they offered dry and more special looking kinda udon. And true enough I wasn't wrong :)

Before I arrived I knew I wanted something more flavourful and intense. XCC and I got the Signature Miso Carbonara ($19) while XYY got the Smokey Kurobuta ($16) (all in pic 11; included other pages of the menu in pics 12-13)! I originally wanted to get the spicy one but decided to try the 原汁原味。And mine indeed turned out delicious and flavourful – the udon was thick and satisfying (pics 3-4), while the gravy was very savoury and tasty with a prominent taste of black pepper without the accompanying spice. Utterly slurpilicious.

There was also a long slab of "72-hour slow-cooked black pork" atop the udon (though the shape of XCC's was preserved better than mine), as well as a generous mix of "applewood smoked bacon & duck". The black pork was well-marinated and slightly sweet, and really tender with a decent ratio of fats and lean meat, though still with slightly more fats than I had hoped (a consideration only because of my fatness 😅 if I were concerned only about taste this would have been perfect).

I was already eating the small pieces of meat scattered throughout the udon during my meal but still had pic 5 remaining towards the end, and it was so satisfying to eat them all in several mouthfuls.

We tried XYY's Smokey Kurobuta one (pic 6) which was a cold udon, and it was so refreshing and tasty! XCC was visibly very impressed on her first mouthful 😂

Good, satisfying meal!

📍Umai Artisanal Udon Bar

Signature Miso Carbonara 🍝 10/10
Slow-cooked black pork with a smoky, hickory flavour that melts in your mouth and is so soft. Paired with applewood-smoked bacon and duck, then finished with aged pecorino romano and a creamy parmesan sauce that adds a hint of cheesiness. This was the savoury goodness we were craving for.

Ten Mori 🍤🍜 9.5/10
Fresh, crispy tiger prawn and veggies in a comforting double-boiled katsu broth that tastes like home, served with springy noodles. The tempura was crisp without being tough, and wonderfully light. Just a really comforting bowl 😚

Truffle Tako 🐙 7.9/10
Triple-fried octopus in a black truffle sauce. The truffle really comes through: fragrant, crunchy and so good!!

Overall: 9/10, High quality food all round! Do expect a bit of a wait during dinner as the queue can get long, but they have outdoor seating (no service charge!) I would defo be back to try other bowls on the menu! 😋

🔥 The Wok Series - Fiery Black Pepper ($19)
🍋 Beyond Tradition - Yuzudachi ($14)
🍗 Pari Pari Chicken ($12)

🥣 Our Review 🥣
We love the huge variety of udon dishes here - from modern fusion creations to local inspired ones! We just had to order bowls from the different series to share! Tbh they were all pretty good!

Carbonara was smooth, creamy and tasty - surprisingly not gelat at all! Kamatama was interesting with nori kombu butter in the base! Fiery black pepper one gave a burst of flavour, while yuzudachi was super refreshing!

Overall, we enjoyed trying these different styles! I especially liked the carbonara one. While I still prefer the traditional dashi soupy udon style, I’d definitely recommend trying these too! 4/5 ⭐️

Be honest, which of these dishes would you fight your friends for?

No ‘paiseh piece’ when it comes to these meals, a feast for everyone in the group because calories don’t count if they’re shared 😋
