Kojicon 2023 is approaching fast! Take a look at more of the lineup of experts in koji and mold-based fermentation who will be speaking at the conference in less than a month.

Hear from Noma alum David Zilber as he discusses Aspergillus molds as enzyme factories and Vanika Choudhary of Sequal and Noon restaurants as she highlights Indian Achaars.

Discover how unique Australian ingredients, koji, and traditional practices merge from Caitlin Koether of Wild Provisions Fermentation. Learn how Andrew Jack of Umami Salts preserves and adds value to seasonally abundant ingredients using koji and fermentation, and about the history, experiments, and applications of koji in the coffee industry from koji coffee pioneer Christopher Feran.

The virtual conference will take place from February 20 to March 5. All presentations will be recorded, so even if you can't attend live, you can access the recordings for a full year after the conference, plus content from Kojicon 2021 and 2022!

Don't miss out on this opportunity to learn from and be inspired by some of the best in the field. Tickets start at just $30. Register now at the link in our bio and at kojicon.org.
