Big news… and the best kind ♥️

After a lot of thought, Nick & I have decided to pass the torch of The Velvet Cup to someone very special—someone many of you already know.

From the early days, Caitlin has been part of this space. She was one of my first team members, helped shape what this little coffee spot has become, and truly understands the heart behind it all. There’s no one I trust more to carry this forward.

What does this mean for you?
Honestly—not much will change. The same care, the same vibe, and the same Velvet Cup quality you’ve come to expect will still be here. If anything, you’ll just be seeing more of her smiling face behind the scenes.

Velvet Cup has always been about COMMUNITY, connection, and outstanding coffee—and that’s not going anywhere.

I’m so grateful for every single one of you who has supported Nick & myself along the way. 15 YEARS! And I’m really excited for this next chapter… for both of us.

Make sure to give Caitlin some love when you see her ☕️✨
♥️ Always, Kim & Nick

We’re realizing more and more how much water chemistry effects coffee and brewers. From the start of our operation, we’ve been intentional about sourcing water, using reverse osmosis, and remineralizing according to our machine’s preference.

@mountainviewpurewater just made our lives so much easier by installing this reverse osmosis system in house. No more running around to fill up 5 gallon jugs—All our espresso, drip, coffee, & ice is made with RO from our very own system. We’re stoked!

Also thanks to @underground_mountain for always helping educate, troubleshoot, and figure out a way for our system to flow without using tap🙏🏽

HIDDEN LAYER / Part 1 – Randy Phillips of @underground_mountain

Let’s get technical: coffee is a detail-oriented craft requiring years to master – whether you’re a producer, importer, roaster, trainer, barista, or cafe owner.

🔦 But there’s one coffee profession that often doesn’t get the spotlight it deserves: the independent coffee technician.

Since the first espresso machine, independent technicians have been on the frontlines of specialty coffee:
☕️ part barista
💧 part plumber
⚡️ part electrician
🎓 part educator
🤫 and a full-time machine whisperer.

🦸 For too long, coffee techs have been the unsung heroes of the industry. But they are literally under the counter of every successful coffee operation, combining their love for coffee and machine know-how into real value for every cafe under their wing.

Synesso is proud to spotlight this hidden layer of the coffee world – the technicians who are maintaining coffee equipment, supporting quality and excellence, and bringing lasting value to local coffee communities.

Recently, we sat down with Randy Phillips in Asheville to talk about what it’s like to be a technician and how @servicelayer formed.

“Our favorite feature on the SLAYER is the steam wand. It is pressurized perfectly and creates the best milk texture for swans and rosettas alike.” - @dripolatorcoffeehouse

📍 Dripolator South in Asheville, North Carolina.

Dripolator is rocking SLAYERs thanks to Randy @underground_mountain 🔧 We’re proud to partner with local technical companies to bring SLAYER to the people🤘

The last couple of weeks have been a whirlwind with the opening of our West Asheville cafe. We hit the ground sprinting and it’s been such an incredible feeling to finally have people in this space. It took nearly two years from the first time we toured 785 Haywood until we opened our doors for service, and many years beyond that of dreaming of this particular building. Driven by the design of @jessileecord, the team of @dromconstruction, too many friends and family members to name, and our own team, we made it happen. There were plenty of late nights, tears, laughter, confusing assembly instructions, etc. Thanks to Danny of @heirloomphotograpbic for photographing a lot of it along the way.

Following an intensely challenging year for us as a business and for the Asheville community at large, we’re so happy to be here and wouldn’t have it any other way.
Here’s to a year with far more laughter, good coffee, and wine and snacks on the patio. Here’s to health! ☕️
