🏳️‍🍳 My Week With Luke Orridge – Let’s Have a Talk
Hospitality Hero was always meant to be a real conversation, not just a perfectly timed post.
So today I’m adapting around my working week because that is the reality of hospitality life. I’m on shift later, so the full informal chat will now be coming tomorrow. But I still wanted to show up today and answer a question from David because this series is about engagement, honesty, and shared experience.
He asked: How has the industry changed around you, and how have you adapted?
One of the biggest changes I’ve felt is around labour pressures and fluctuating hours. There have been summers where I’ve only worked a couple of days a week, and other times like now where the schedule becomes intense very quickly. Long shifts, balancing work with scouting commitments and training, and constantly adjusting to what the week demands.
What has helped me stay grounded is having a guaranteed reset point. Mondays are my “Sunday”. Whether it’s a quiet day at home or preparing for Scouts in the evening, that space allows me to decompress and mentally prepare for the week ahead.
The industry has also become more open about wellbeing, communication, and culture. We are slowly moving towards environments where passion does not have to mean sacrificing your mental health. I have adapted by learning to pace myself, accept unpredictability, and focus on building genuine connections with people.
Hospitality is not just about the food we serve. It is about the lives we live around the shifts.
💬 Call to Action
This series is a conversation.
If you work in hospitality or simply love food and drink, I would genuinely love to hear from you.
Ask me anything about chef life, kitchen culture, favourite dishes, drinks, wellbeing, or career journeys. Drop a question in the comments or send me a message. Your question could be part of tomorrow’s full hospitality hero conversation.
Let’s talk.😁🩵💙

Drink Highlight Wednesday – Grapefruit Gin Martini 🍸

A couple of weeks ago, I asked whether to make a Spritz or a Martini.
My friend David answered that call — so tonight, it’s Martini time. This is coming to you about an hour and a half from a normal posting schedule because I'm I'm on shift right now.

This one is inspired by a memory from my days working at The Alchemist. One of the head bartenders used to make a Grapefruit Gin Martini for me. He said Always stirred. Always smooth. Always dangerously moreish. The kind of drink that felt like a quiet reward after service.

This version became more personal tonight because I finally opened — and finished — a bottle of Nelson’s Gin Timur, picked up at the BBC Good Food Show back in 2022. It had been sitting on my shelf ever since, partly out of respect for the craft behind it and partly because of the memories tied to that day.

But good bottles shouldn’t gather dust. They should gather memories.

While a classic London Dry would probably recreate the original bar moment more closely, the Timur gin brought a subtle citrus spice that worked beautifully with fresh grapefruit. I kept the balance simple and instinctive: stirred, not shaken, fresh grapefruit juice for brightness, and just a touch of honey syrup to soften the sharpness.

Elegant, clean, and deceptively easy to drink.

It’s one of those drinks that reminds you why bartender culture matters — the off-menu moments, the shared knowledge, the small rituals that stay with you long after the shift ends.

Tonight’s serve might not fill the glass to the brim, but it fills the memory just fine.

Huge appreciation to @nelsonsdistillery for a bottle that finally got the send-off it deserved.

What’s the best off-menu drink a bartender has ever made for you? 🩵💙

Recipe Highlight – Dorset Apple Cake Returns (Gluten-Free Edition)💙🩵😁

This week’s recipe highlight lands on a Wednesday (schedule shift!), but it’s also a rare moment — this time, I baked it at work! And what better recipe to return to than my Dorset Apple Cake — this time, made gluten-free for customers looking for something comforting with coffee or served as a dessert with custard or ice cream.

This cake has personal roots. It's a recipe I used to make with my grandma, and now over five years on since she passed, it feels right to carry that memory forward through baking — in my own way, in my own kitchen.

What made this even more special? A message I received earlier this month from my friend David, who said:

> “I decided to give this cake a try, instead of apples I used blackberries & replaced normal milk with the coconut kind — turned out pretty well if I say so myself.”

Seeing someone adapt my recipe and keep that rustic charm truly meant the world. It's a reminder that food is more than ingredients — it’s connection.

So here’s to legacy, to growth, and to friends who remind us why we share our craft in the first place. Every like, save, comment, and message — it really does go a long way.

Industry Highlight Thursday: The Time I Wasn’t Behind
For @carol_cornelia_herrera_2.0 & @uniquely_david – you asked for continued hope and advice for life. This is both.💙🩵

This watch has been with me for over 10 years—from the moment I started college in 2014 to now. My first one melted on a solid top (classic me😅), but I bought this same Casio model again from Amazon. It’s not fancy, but it’s mine. It tells the time—and reminds me of who I’ve become.

I won’t lie to you. I’ve felt behind in life.
I’ve felt the sting of being overlooked while others are promoted or praised ahead of me. I’ve wondered if I was doing enough, or if I was even seen at all.🥺
It hurts. That kind of thing does get to you.

But what this watch reminds me. when I really look at it- is that I have come a long way. Sometimes we’re so focused on where we’re not that we forget how far we’ve already travelled. It’s okay to stop, breathe, and reflect on the little victories. The growth we made while life threw its curveballs: personal issues, loss, burnout, self-doubt. all of it.

I live by the three Ps: Practice, Patience, Perseverance.
And yeah—I forget them sometimes. Because I’m human.
But I always come back to them, eventually. Sometimes longer than other times but I always find a way.

I found this watch in my jacket pocket on Tuesday after thinking I’d lost it again. And it hit me. Maybe it showed up again right when I needed reminding:
I’m not behind. I’m just on my journey.

And so are you.

So if you needed a moment of hope today, this is it.
We’re not falling behind—we’re finding our pace.

What’s your reminder to keep going?
