Prep and service for another private event. Had a lot of fun with this one.
.
Private dinners are always a lot of work, but also the most rewarding kind of cooking.

Folks have a tendency to air grievances at restaurants; but I’ve found that when cooking in the homes of clients, both chef and food are met with nothing but gratitude.

While a regular private chef at home may not be affordable for most, the ability to book one for special occasions is almost always less expensive than going out. Interested in having a chef cook your next special meal? Fill out my form in the links in my bio
.
Shout out to @gravyboatjones for the helping hands and the B-roll

Plenty more to come from this amazing evening celebrating @oscar_eduardo_de_paz and his most recent exhibition, An American Son on view now at @chriswhitegallery . But you know I had to steal all the food pics for the first post!

Another lunch in the books. This one for the former, and new heads of Christiana Care.
.
1st course- Andalusian Gazpacho with radish, green onion, and balsamic caviar
.
2nd course- Dijon marinated rainbow trout with pea and spinach purée and sautéed garden vegetables
.
3rd course- Golden pavlova with Chantilly, stone fruit, berries. Creme anglaise poured table side because what would lunch be without a table side pour?
.
Shout out Del-tech, I’m not sure how the jacket still fits but 🤷🏻‍♂️

I originally had voiceover audio with this video but ima spare y’all the pain 🫠
.
3 person private luncheon today on the estate
.
1st course: cream of tomato soup with a tarragon mousse and tomato conserva. I poured this table-side after the plate up
.
2nd course: roasted quail with baby red potatoes, celeriac purée and a thyme and honey espuma. I didn’t really know what I was going to do with this dish going in to the prep day. All in all it was a good dish, though it definitely lacked color and wasn’t my favorite plate up
.
3rd course: golden pavlova with chantilly cream, macerated peaches and local blackberries, and raspberries, finished with (another) tableside pour of creme anglaise
.
Hope yall enjoy!
