🏀💙 Another great day with our Mavs family at the Mavs Academy Combine!

Our team at Scottish Rite for Children had the opportunity to work with middle school athletes, conducting movement screenings to identify potential injury risk factors and providing education and individualized corrective exercises to help keep these young athletes healthy and performing at their best! 💪

A huge thank you to all of our incredible volunteers from Research, the Movement Science Lab, Sports Physical Therapy, and Community Outreach from Scottish Rite, and PT students from UT Southwestern, for making this event possible!

Special thanks to Dr. Javier Masquijo, one of our sports medicine surgeons, for sharing his expertise with parents, and to his son, Fran, for volunteering his time to help!

We always love opportunities to make a meaningful impact in our community, especially when we get to collaborate with our Mavs family! 🏀💙

OSEE had a great time attending Career Inspire at the Irving Convention Center!

We were excited to have representatives from the UT Southwestern Medical School, Graduate School, and School of Health Professions come together to introduce students to the many educational pathways and career opportunities available at UTSW.

We loved connecting with students from across North Texas and giving them a glimpse into the world of UT Southwestern, higher education, and careers in healthcare. From learning about our schools to exploring the many paths a future career can take, it was inspiring to see so many young students curious about what’s ahead! 🩺🔬📚

We’re proud to be part of conversations that help students see what’s possible for their future!

Having balanced meals made with whole foods is helpful for managing type 2 diabetes and heart disease.

In another post from our amazing United To Serve Clinical Nutrition volunteers, here’s a simple medium carb dish that is high in fiber and protein:

Lean Beef Tacos
Serves 4

12 Whole corn tortillas
1 lb lean ground beef, 95% lean/5% fat
1 tsp salt
1/4 cup olive oil
1.5 tsp cumin powder
1.5 tsp oregano, dried
1.5 tsp garlic powder
1.5 tsp onion powder
1 tbsp chipotle powder
2 roma tomatoes, diced small
1/2 cup white onion, diced finely
1/2 cup cilantro, minced

Salad:
8 cups lettuce of your choice (a serving is 2 cups)
4 tbsp olive oil
2 limes, cut into wedges
2 limes, cut into halves to squeeze over lettuce

Directions:
1. Set oven to 350 degrees
2. Heat pan to medium-high heat
3. Add olive oil, add spices and oregano, sauté for 1 minute
4. Add ground beef, break up with your spatula and keep sauteing for 7-10 minutes
5. On a baking sheet, layout 3-6 corn tortillas, and heat for 7-10 minutes
6. Assemble each taco with 1/4 cup of ground beef, 1/4 cup of tomatoes, and 1 tbsp of onion and cilantro.
7. Serve with lettuce drizzled with olive oil and freshly squeezed lime.
8. Don’t forget to drink 2 cups of water with your meals.

Buen provecho!

This delicious and satisfying meal is high in fiber, protein, saturated fat, and iron.

It has a medium source of carbs, sodium, calcium, and potassium.

Reading food labels can be confusing, but it doesn’t have to be.

The % Daily Value (DV) is a guide based on a 2,000 calorie/day diet.

When you see:
20% DV or more = High source
10-19% = Medium “good” source
Less than 5% = Low source

There’s no food that is good or bad. Just all it like it is, high protein, high fiber, or high saturated fat. That tells you more information about the food than calling it “good” or “bad”.

Some meals may have more saturated fat that others, and that is okay. What is important is it’s all about your long-term eating patterns and your overall health goals.

Game day started with a special delivery! ⚽️🙌

Puranjay Shori, a second-year @utswmedschool student, and Ella Chaisson, a @utsw_shp Prosthetics and Orthotics student, represented UT Southwestern during the game ball delivery for @dallastrinityfc.

We love seeing our students take the field! A person in a blue shirt and another in a white soccer uniform are on a large soccer field in an open, empty stadium. The person in white has a foot on a soccer ball. They appear to be exchanging a friendly gesture.

Whole grains have three parts (from outside to inside):
1. Germ - the smallest part → the seed
2. Endosperm - the largest part → the food for the seed
3. Bran - outer layer → the shield that protects the seed’s food.
For example, whole grain corn tortillas, whole wheat tortillas, or whole wheat bread are made with the entire grain. But, flour tortillas or white bread are only made with the endosperm.

The benefits of whole grains:
1. They are packed with vitamins and minerals that help our bodies work properly.
2. They have more fiber than non-whole grai

Kudos #BeTheChange Grantee! The UTSW PA program’s #FoodAsMedicine project implemented teen meal preparation and elder service, a kid's culinary camp, take-home gardening kits, and food-access resources, including recipe cards and a Fresh Connect Produce Plus Card starter guide. For #PAStudents, these activities combined community engagement, experiential learning, culturally responsive education, and translation of medical knowledge into practical information. Their goal was to use food as a tool for #HealthPromotion while equipping families to bring the concepts of #CulinaryMedicine, #Gardening, and #HealthyEating into their homes.
