Our quality is revealed in every dish, every gesture, the legacy of a tradition that transcends generations. At Coque, we not only boast memorable flavours; we bear the signature of a mastery cultivated over centuries of passion and discipline.

This 17-course, 380-step menu displays a creativity that defies expectations, with The Macallan mastering the art of ageing and maturation. We both share something essential: a dedication to the sublime, to detail, to the aroma that lingers.
Because true elegance lies not only in flavour or presentation, but in a commitment to excellence that honours the past, inspires the present and paves the way for the future.

A table that is a work of art. Like the elegance of a Macallan staging, a spectacularly set table that is a delight for all the senses. Captivating details, inviting textures, and seductive colors come together to elevate the dining experience to something sublime.

Highlights of World's @50bestbars in Madrid last year. Well, very limited highlights because I suck at photo documentation.

Extremely proud of the Asian bars in both the top 50 and extended lists. Not only is this testament of the craft, techniques and trends set on a global stage but also the cohesion and community built across markets in the world's largest continent.

I had the absolute privilege of hanging out with the different Asia bars over impromptu meals and learning more about your markets and your ambitions for your bar and your teams. Watching each of you share in your peers wins as much as they celebrated yours reinforces my sense of belonging to this community.

Shoutout to @priyankablah @viviliciousxo @rtann @mr_coldicott @johnnghy @hollygrahamdrinks whom, I'm sure, have had a big hand in building this community.

Also very proud to be part of the Suntory advocacy team. It has been nothing short of incredible and I've learnt so much from each of you.

Once again, big congrats to everyone on the list. Excited for what 2025 will bring! Catching up on some 2024 highlights…

@50bestbars was an incredible incredible experience. Tbh I don’t know if I can put into words the time I had, but I am forever grateful to @suntoryglobalspirits and @suntory_rokugin for inviting me to be part of it ✨

A giantI LOVE YOU to @roomandroot and @kb_vision… my detail queens and masters of getting things done, I’d have been genuinely lost without you.

AND, of course, our Roku Scholarship finalists - my duckies @non_barnary @keeley_mca @kartika.kallianpur - you are all such beautiful humans and the brightest of lights… I had the best time wrangling you through the streets of Madrid. I couldn’t be more excited to see what amazing things you do next! 🦆🦆🦆

Hard to believe it’s already been over a week since this life changing night.

The outpouring of joy and love that has come from this has truly been amazing. This is just the start of the work, and I am so excited for the projects that will come from this.

But before all of the next big steps I feel like I need to take a moment and acknowledge: we ATE!
