Another late greenhouse night after the market, but market dinners are the best dinners.
A beauty halibut fillet with a white miso, ginger honey, lemon grass, kaffir lime, black garlic, ginger and rice whiskey marinade and glaze baked in a banana leaf pouch with ginger, garlic, lemongrass and lime leaf sticky rice and some delicious kimchi and our delicious microgreens. And obviously a couple fantastic market bowls to show it all off.

There’s something about seeing these ingredients in the market that always makes me smile, and gets my imagination going. Any guesses what sauce is coming up next?

Spend a perfect fall day with us at the ELI! 🧡🍂 We adored all the delicious treats at Riley Park Farmer’s Market and we couldn’t get enough of all the lovely locally-grown fruit & veg. 🍑👩🏻‍🌾 The Vancouver rain couldn’t stop our fun… 🌦️ We headed to the Bloedel Conservatory in Queen Elizabeth park for a tropical afternoon stroll and made the most of our time together. 🧺🌿🦜

DUXELLES RECIPE
2lb minced chestnut mushrooms
2 shallots minced
Few sprigs of fresh thyme
Dry sherry, vermouth or dry white wine
Fresh black pepper to taste
Kosher salt to taste

Blitz mushrooms in food processor by pulsing carefully until a fine mince is achieved, do not do the shallots at the same time as their moisture will impart to the mushrooms. You want less moisture, not added moisture.

Mince the shallots in the same way but apply force to squeeze out excess liquid.

Melt 2tbs butter or olive oil in a pan and add shallots for a few seconds before adding mushrooms and thyme. When the mixture appears quite dry and aromatic, add 1 tbs butter and the wine. Cool until liquid evaporates.
