We’re no Paris, London or Milan, but we do have @veritablebistroathens and Alain Parodi, and that says quite a lot. #athens

A Small December Record

20 restaurants I visited in Athens this month.
The city’s dining scene is evolving with intention; still taking shape, already offering moments of real substance.
There’s care in the room.

Here’s to a stronger 2026!

The order reflects the photo sequence and not any kind of ranking. @the_fnl_guide

He can cook à la minute, right in front of you. He can cook with one, two, three ingredients and still make it feel complete. He’s the kind of chef who can take you from a clean, simple tartare all the way to a sensational Lièvre à la Royale; a dish that could comfortably sit on the menu of any two-Michelin-star restaurant, yet here it arrives like bread, because the point is always the flavour and not the show off.

Over the years I’ve tasted well over 150 different dishes from Alain Parodi in @veritablebistroathens, and what I always adore is how alive the cooking feels. It never becomes routine. It keeps moving forward, quietly, stubbornly, beautifully. Add his love of hunting, his relationship with game, the respect for the animal, the understanding of texture, time, and restraint, and you get something Athens rarely offers in this exact form: a table that feels genuinely veritable, in the deepest sense of the word.

A true table, in an era where “authentic” has become a prop.
