It’s time to stop being afraid of wine.

When was the last time you felt embarrassed and clueless when ordering a beer, ice cream, or even fast food? Now, how about wine? In much of the world, wine is a staple of everyday life, an expected beverage that’s served with every meal. So how is it that, in the U.S., so many of us find choosing a bottle of wine intimidating? Wine shouldn’t be mysterious or scary. Ordering and learning about it should be just as fun as ordering ice cream. And pairing your wine with food should be equally as exciting.

Wine and food are things that people encounter in their everyday lives, so when someone else can be considered an expert on them, it creates a sense of insecurity - “I eat food. I drink wine. I should know more about them.”

Wine may feel highbrow, reserved for the world’s elite— especially when confronted with an overwhelming list at a restaurant that a snooty and sometimes intimidating wine sommelier is directing you through it.

But what if we break it down to its core? Wine is an agricultural product. Harvested by farmers. Produced by neighbors and friends. Wine comes from grapes. Grapes come from vines. Vines come from the earth. Just like the ketchup you put on your fries. Wine should not feel out of our reach.

So how do we change the narrative? We educate, that’s how! This week we will tackle the stigma and what can be done to make wine-drinking fun again! Enjoy it, learn about it, but don’t sweat it. Cheers!

Time for the perfect date night recipe with one of our favorite companions - Cabernet Sauvignon!

We all know that Cabernet pairs incredibly well with steak...but why?

Cabernets have a high acidity that cuts through fatty and umami foods brilliantly, providing a tanginess that’s absolutely splendid with a good steak. They also tend to have richer tannins, which create a "drying" sensation on the palate. This acts as a palate cleanser, perfectly balancing out the mouth-coating richness of the meat. This is also the case when paired with a rich, creamy sauce. Add in herbs such as thyme, rosemary and sage to reflect the subtle notes in the wine, and boom, you have a perfect dinner for two.

STEAK & HERB CREAM SAUCE

INGREDIENTS

4 Tbsp butter
1/2 cup beef broth
1 1/2 cups heavy cream
2 to 3 Tbsps chopped fresh herbs (rosemary, thyme, and chives)
1 Tbsp dijon mustard
1 Tbsp garlic paste or minced garlic
kosher salt, pepper, crushed red pepper flakes
4 steaks of choice
1 bottle Valley to the Sea Winery Cabernet Sauvignon (because, obviously)

PREPARATION

1. Set a skillet over high heat and add butter, beef broth, heavy cream, fresh herbs, dijon mustard, garlic, kosher salt, pepper, and crushed red pepper flakes.

2. Bring to a boil. Reduce heat to medium-low, and simmer 13-15 minutes. Let sauce come to room temp while you grill steaks to allow it to thicken.

3. Coat steaks with olive oil and season both sides with kosher salt and pepper.

4. Preheat the grill to medium-high heat. Grill steaks for 3-5 minutes per side depending on thickness and preferred temp.

5. Top steaks with herb cream sauce and serve with your favorite side.

6. Pour a large glass of our Cabernet & enjoy!

It's time for another wine pairing recipe from Valley to the Sea!

We are loving our Viognier this time of year, so we decided to pair it up with a light yet slightly spicy and rich seafood dish! Viognier loves spice, seafood and a sweet earthy root vegetable, so we thought why not try a halibut and turnips! Turnips are mildly spicy when raw (which Viognier also loves) but turn a sweet, nutty earthy flavor when cooked. Matched up with some sweet and spicy snow peas, and dinner is served!

INGREDIENTS
1 tsp vegetable oil
3 cups fresh snow peas
2 tsp minced fresh ginger
1/2 tsp chili flakes
1/2 tsp salt
3 cups turnips, peeled and cut into wedges
1 tsp vegetable oil
1 tsp sea salt
4 200 g halibut fillets, about 3/4 inch thick
3 tbsp white miso paste
4 tsp honey
1 tsp vegetable oil

TURNIPS
Preheat oven to 425F.
Combine all ingredients in large bowl, stirring to coat wedges.
Evenly space wedges on baking sheet and cook for about 20 minutes or until they begin to brown.

While turnips are roasting,..

HALIBUT
Combine miso, honey, and oil in small bowl.
Spread over fleshy side of fish.
Heat oil in cast iron skillet, or other oven-proof frying pan, over medium heat.

Add fish, skin side down, and cook for about 3 minutes.
Place skillet under broiler for about 6 or 7 minutes, or until miso begins to brown and fish flakes easily when cut with fork.

While fish is cooking...

SNOW PEAS
Heat oil in medium frying pan over medium-high.
Add snow peas, stirring often, until bright green and tender-crisp, about 2 minutes.
Add ginger, peppers and salt.
Cook for another 2 minutes.
