Day 5 of 7 The Tofu Sandwich Series: BBQ Shredded Tofu Sliders!! One of my favourite BBQ hacks! Shredded tofu makes such a good pulled pork alternative, and it’s SO easy to make. I love prepping a batch before heading to a BBQ so I know I’ll have something to eat! I’ll even bring some vegan ranch to mix with plain coleslaw if there’s any available. Ingredients: 1 block extra-firm tofu 1 tbsp oil .5 tsp @mccormickspice Garlic powder, onion powder Pinch of salt Your favourite BBQ sauce Mini slider buns @dempstersbakery Vegan cheese @violife_foods Favourite vegan ranch Coleslaw & pickles Directions: Shred tofu with a cheese grater (you can crumble it too, but shredded stays on the bun better!). Pan-fry in a little oil until slightly crispy. Add seasonings and bbq sauce and cook a few more minutes to create a crust or more caramelized texture of the sauce! Add to slider buns, top with vegan cheese and bake at 400F for about 5 minutes. Finish with vegan coleslaw, pickles and extra BBQ sauce! Such an easy recipe to prep ahead for your next BBQ or meal prep!

How beautiful is this #VeganGlutenfree crustless quiche I made to serve for brunch? Cook whatever vegetables you want, I chose to dry sautée sliced mushrooms. I did not pre-cook the asparagus or tomatoes. While your vegetables are cooking, mixed together a carton and a half of @justfoodcompany with salt, pepper, kala namak if you have it, a quarter cup of unsweetened dairy free milk, and a couple tablespoons of all-purpose flour (I used @bobsredmill gluten-free). Mix the vegetables into the egg mixture, and pour into a casserole. Add a handful of shredded cheese if you want, I used @violifeca For this one, I added the asparagus on top as well as sliced tomatoes. You can also mix it in, but I wanted it to look pretty! Bake at 350° for approximately one hour. At the end, I added another handful of cheese and turned on the broiler to crisp it up. Let set and serve!

Delicious breakfast casserole made gluten free and without animal products, topped with a delicious homemade hollandaise 🌱 Steve went crazy for it, as he always does 😁🥳 Usually make it with some beyond sausage but didn’t have any - that’s ok, still delicious! 🤤 #vegan #glutenfree #glutenfreevegan
