As part of Hokie Help Out, a community resource fair for Virginia Tech students, a dietetic intern led a healthy snack demonstration and shared practical tips for making nutritious choices while balancing classes, busy schedules, and everyday life as a graduate student.

The event also highlighted Virginia Tech's free nutrition counseling services available to all students, faculty, and staff.

Dietetic Intern Sarah H. recently led a hands-on meal prep workshop for Virginia Tech employees at the Alexandria campus, sharing practical tips for planning balanced meals, saving time during busy weeks, and building confidence in the kitchen.

Congratulations to Virginia Tech's October Advisor of the Month, Elizabeth Engel! Elizabeth provides academic advising to HNFE undergraduate students pursuing the Exercise & Health Science major.

This past week our students completed their first coordinated travel! Swipe to see what each program was up to!

Here we see our Geoscience students in the Swiss Alps studying sedimentary and tectonic evolution of the mountains!

Our students in the European Affairs program explored historical dimensions that shaped Poland’s economic, political, and social transformations of the 20th century!

Here you see our Civil Engineering cohort studying the water infrastructure and resource management in Germany after also visiting Italy and other Swiss cities!

Our architects visited Norway, Sweden, and Finland to learn about mass timber construction and library design!

And finally, our Salute students visited Lausanne, Switzerland to study nutrition across the lifespan by spending time at a variety of health and wellness facilities!

Orientation is off to a great start. We've spent time getting to know one another and preparing for clinical rotations this fall. We enjoyed time all together on campus this week and are looking forward to a great year ahead!

Everyone please give a warm welcome to our Fall 2026 Steger Center cohort! This weekend we completed orientation and took a beautiful trip to Bellinzona. We have five wonderful programs joining us this semester:

Architecture Fall Residency
Civil and Environmental Engineering
Geosciences: Rockin’ the Alps
European Affairs in a Global Context
Salute: Food and Health in Switzerland

Each group has an excellent group of students and faculty ready to take on the new semester here in Riva San Vitale, Switzerland! 🇨🇭

Yesterday I had the pleasure of presenting alongside past student, and now dietitian colleague, Emily Cox, to third year students at the Virginia Tech Carillion School of Medicine @vtcsom . We presented an outpatient focused case study to demonstrate the utilization of malnutrition screening, food insecurity screening, motivational interviewing, universal precautions for low health literacy, and how/why to refer to registered dietitians. It was a new and different challenge and a great opportunity to guide future physicians to better understand the role of nutrition and dietitians in chronic disease prevention and management.

🍍Raeanne created a new pineapple fried rice recipe for Pulaski Co Public Schools, and gave two nutrition talks to the kiddos

🍆Jordyn helped kiddos learn more about gardening and composting at the Seed to Supper camp hosted by @liveworkeatgrow

🥔Alexis prepared a loaded baked potato bar for a superintendent lunch meeting with Salem City Public Schools

Here's a sweet story with a surprising twist: your favorite foods may be shaped by more than just your taste buds! 🍭🧠

Our latest researcher spotlight is: “Mary Elizabeth Baugh: Redefining taste beyond the tongue,” by Virginia Tech student Michael Naval.

Concerned by the growing obesity epidemic and inspired by her work with patients, Baugh turned to research, exploring how signals from the gut communicate with the brain to shape our food preferences and eating behaviors.

By studying how the body responds to nutrients after we eat, her work challenges the idea that food choices are driven by willpower alone and points to the powerful role of gut-brain communication in shaping long-term health.

✨ Learn more about how Baugh’s research is helping scientists better understand eating behavior and informing approaches to nutrition and public health.

Dr. Baugh is a research scientist in the DONNUT Lab ( @vthnfe ) and at the Fralin Biomedical Institute at VTC @fralinbiomedical.
