The Ram Chefs answered the call to action! They created and sold healthy trail mix, raising $300 for grocery gift cards for those affected by the shutdown. Inspiring others to make a difference!

On April 8, the Frederick Douglass Institute and the African American Studies program hosted a powerful and informative session on Black Maternal Health, held both via Zoom and in person. The event explored systemic disparities and preventable maternal mortality in the U.S. With 126 attendees, the program sparked meaningful dialogue around this vital public health issue.

Thank you to our panel of experts and community members for their insight and advocacy.

Special shout out to my amazing nutrition student Emma Carpenter and the great work she is doing each week with the folks from Safe Harbor. Today we made 160 egg and vegetable breakfast sandwiches and sweet potato hash browns. Emma is amazing!

Our Queens and Bean event was so much fun and we got a peek behind the scenes on the recipes made. Ella and Jovanna, WCU Nutrition majors, made the winning dish, “Marry Me Chickpeas” which you can make at home with the ingredients and recipe above. Don’t forget to check the resource pantry for key ingredients in the recipe (or any other basic necessities you might need)! Swipe to see Ella and Jovanna’s biggest tip while cooking in the kitchen and check back next Wednesday for another recipe! 🫘🍅💍
