So. Fucking. Good. Not your “traditional” French tartare in the best way possible. Yes a chunky tartare, but the wagyu was so tender it melted in my mouth. The crunchiness of the walnut pesto melded PERFECT with the tenderness of the beef. The sweetness of the umeboshi really wrapped it all together. The potatoes were paper thin and were the perfect vehicle that didn’t take away from the tartare but still complimented it. Absolutely delicious. Went up to #2 on my list. (It came covered in the potato btw!) ALSO EVERYTHING ELSE WAS DELICIOUS I’d recommend here 1000%

I would like to shine a big light at my man @wine_terrorist whose Restaurant 360 was the Catalyst for me to drive and share my love for Natural wines!💖
For over 5 years we ran shit in Redhook!

I got a seed for the wines I favored on the list that @ortovulcanicolalupabolsena created to open Balthazar but serving wines like Courtois Racines, Dard & Ribo on that floor in ‘97 nothing gave me more pleasure, seeing that instant gratification of love and shock on peoples faces. 🙃🤭
Working closely together, having great travels, fun but deep chats with the late and great Joe Dressner and seeing that revolution taking shape in the world of wine.
I wanted to be in the middle of no other place, standing for what is right in this world and something I cared for deeply!

360 is gone but will never be forgotten a breeding grown and inspiration that are endless for restaurants we all familiar with now.
