Pizza Margherita in @Gozney! Wonderful result as always with a robust recipe.
.
Owned the Gozney for a good year now. Got a ton of mileage out of it, having made my 300th pizza this weekend (yes, I counted!).

I used a 24hr poolish (300g flour, 300g water, 3g yeast). Combined with 1.2kg flour, 700g water, and 40g salt. Rise after portioning for 3 hours.

Crushed tomatoes with salt (blended with hand mixer), parmesan cheese, basil, mozzarella, swig of olive oil and bake in Gozney Arc XL. Result always comes out incredibly well! Even after hundreds of pizza, the result is still astonishingly good!

This is a little gushy @wildbake appreciation post.

Last night we had our final delicious pizza.

It might seem silly getting emotional about pizza, but Lewis's pizza has been a part of our lives every Monday night for over 10 years. Not only are the pizzas incredible, but always served with a smile and a chat, even with orders piling on and on.... something that we're both openly a bit rubbish at. Lewis is an icon of customer service and always looking at the positive side of life and seeing the best in people. That positivity spreads to all his amazing staff and is a lesson to us all.🧡🧡🧡

Anyway, thank you for all the dark night winter pizzas , picking up in the rain; all the summer pizzas sitting in the garden; all the "can we swap the ham for mushrooms" pizzas; all the Paysanne Special hints; all the slices of salami for Pedro and most special of all: the boot of the car pizzas with small people in their wellies. 💚💚💚

Thanks mate 💛💛💛

(I did get permission from all the (now teenage) Cole & Hoppe girls to use this 😍)
