ḵ’a̱laams vinegar 🌹🌸

Wild roses are here for such a short time. @wildtablebc inspired me to try and preserve their sweet aroma in a vinegar this year. Please visit his page for the recipe!

The original recipe called for apple but I had a pear in my fridge that was looking really sad. I also used some unpasteurized apple cider vinegar and some plain vinegar because I didn’t have enough. I also added a variety of sa’mn tips I picked at the same time as the ḵ’a̱laams.

This will hang out and ferment for a couple weeks while I try and remember to shake the jar daily.

What would you make with this?
