21 year old me.

Last is probably my favourite from Ciro’s series. Shame Instagram doesn’t love a portrait + landscape mix.

Wallpaper magazine had requested I get a few portraits done for an article, some kind of 30 Under 30 story I was in.

I was about a week into the 2009 season at elBulli and had to ask Ferran Adrià if a photographer could come into the kitchen to photograph me for the article. I was so young and inexperienced, I remember finding the whole thing pretty embarrassing.

Looking back, I always think this was kind of the photoshoot of a lifetime for a young chef. Pretty insane that I had the opportunity to have these portraits taken at none other than elBulli.

The brief mentioned a classic French omelette and I was convinced I needed to make the perfect one. Aitor helped me practise. No idea how many eggs we went through.

Fast forward to yesterday and a very last minute catch up with @aithor_zabala , more than 10 years since we’d seen each other. We met as very young chefs in the rather intense world of elBulli and went through a bit of life together afterwards, including some extremely poor years in Spain. We had a good laugh about those times and all the people we met along the way.

Aitor has been a pretty influential person in my cheffing career and I’ve always had a huge amount of respect for him. He always talked about having his own three Michelin star restaurant one day. Pretty special to see the path he’s forged and very proud of my old friend.

And @cirofrankschiappa , the incredibly talented photographer behind these portraits, we just missed each other this time. Long overdue for a catch up

Thank you, @aithor_zabala and @chefjoseandres , for combining your magic and bringing us all together in such a powerful way — in a place that feels like home to many of us. Joining José’s team at the old Cafe Atlántico/Minibar was the first reason I came to this country almost 20 years ago. ❤️
