My Easy Quinoa Salad 🥒🍋

10+ years of making this salad, and I’ve got it down! Here’s my smaller-batch version.

INGREDIENTS

* 1 cup quinoa
* 2 cups water
* Drizzle of avocado oil
* Olive oil
* Fresh lemon juice
* Salt & pepper, to taste
* Cucumbers or any veggies you love (celery, peppers, cherry tomatoes, and cilantro are great in this too!)

DIRECTIONS

1. Rinse quinoa thoroughly and strain.
2. Bring water to a boil, add a drizzle of avocado oil and quinoa. Set your 15 minute timer from the moment you add your quinoa.
3. Once everything is boiling again, reduce to a simmer with the lid slightly ajar. Stir every few minutes to help the water evaporate.
You’re looking for fluffy quinoa that isn’t soggy, wet, or overly dry.
4. Turn off the heat and move the pot to a cool burner. Let stand for at least 1 hour to cool completely.
5. Add chopped veggies, olive oil, fresh lemon juice, salt and pepper to taste. Toss and enjoy!

Save this one & let me know how your family liked it!
