@filliers_distillery Mizunara Cask

Mizunara, which translates as ‘water oak, is a type of Japanese oak that’s infamously rare. Mizunara oak trees must grow for at least 200 years before they are large enough to be cut into barrel staves. Mizunara trees grow bent, twisted, and full of knots. This irregular growth pattern means that coopers must manually split the logs precisely along the natural grain lines. Only about 1 in 10 harvested trees yields wood straight enough to build a barrel.

Mizunara oak has an exceptionally high moisture content. This is where the name Water oak comes from. This high moisture makes the fresh timber very soft and difficult to dry properly. Furthermore, once dried, the wood structure remains extremely porous. Building a watertight barrel out of it requires elite master coopers, and even the finished casks carry a high risk of leaking during the aging process.

The Japanese government heavily regulates the felling of these ancient trees to preserve the ecosystem.

Why would one use it if it’s such a difficult type of oak to work with? Because flavorwise it works magic. It imparts flavors and aromas such as sandalwood, some light incense, vanilla and some funkier notes such as coconut.

First edition of the 50 Best Bars of Europe in Amsterdam. An incredible few days surrounded by some of the most inspiring people in our industry.

One thing was bothering me: not a single Belgian bar made the list.

Together with Brussels Bar Show, I’m making it my mission to help put Belgian bars where they belong. Because we have the talent. We have the creativity. And above all, we have hospitality in our DNA.

To everyone I met this week: thank you for the conversations, the inspiration, the support and the love. This community is something truly special.

See you next year... and hopefully with Belgium represented where it deserves to be. 🇧🇪🍸

Het is feest bij Baroue, want Yannick (a.k.a. Mister Negroni) is jarig!

A small change to Sunday’s guestshift at BelRoy’s at Nine.

Unfortunately, Yochen from Bar Hootch won’t be able to join us this weekend for our bar crawl finale.

In his place, we’re welcoming two standout names from the Belgian cocktail scene.

🍸 Dieter Moeyaert (@dieter_moeyaert) of @grootvlaenderen in Bruges, recently named Cocktail Bar of the Year 2026 by Gault & Millau, will be behind the bar until 20:00.

🍸 From 20:00 to 23:00, Yannick “Mr. Negroni” Van Dyck (@yannickvd), one of Belgium’s leading cocktail voices, takes over joined by Jo Schoeters from @baroue.be

A line-up that speaks for itself.

We’ll see you at BelRoy's at Nine.

Find more info about our bar crawl on our Instagram feed.

“Heb je wel iets te doen als er geen event/workshop is?” 🫣😝🫢 ja hoor! Dan zijn we druk bezig achter de schermen met computerwerk, productie, marketing en zó veel meer! Want ook dat komt bij een bedrijf in cocktail catering kijken! 🍸

We doen het met heel veel plezier maar soms wordt het al eens onderschat. 🤫
