Had a sample. Pretty excited for brekkie.
Store bought granola is HIGH in saturated fats. Which contributes to high cholesterol. So oats and a pile of other good, soluble fibres, with our very own maple syrup will make for a much healthier breakfast combo.

Shack had to be dug out a bit too! You bet your bottom dollar I had a nap when I got home.

Wild. Thank god for some young, long legs packing most of the lines for us. Have to make the most of the warmer days before another cold snap, and then hopefully tapping and SAP!!

Harvest Grain Bowl

If you wonder what I am cooking on a weeknight 9/10 it’s some type of grain bowl or quinoa salad. This one is a take on my favourite salad from a restaurant in my partner’s hometown that sadly closed.

This bowl contains:
- Quinoa and brown rice (I love a mix of grains!)
- Chopped Apple
- Sliced Almonds
- Kale (I always tear the leaves off the stems and massage with the kale with lemon juice for about a minute)
- Chopped leaf lettuce
- Grated Carrots
- Vegan feta

I also love to add chopped beets and pomegranate seeds, I just didn’t have any on hand. Grain bowls are the perfect opportunity to get creative with whatever veggies you have in the fridge.

👉Comment down below with your favourite grain bowl topping!

Serve the bowl with your protein of choice, my favourite is salmon glazed with dijon and maple syrup!

For the dressing I made my go to maple dijon vinaigrette.

Dressing:
- 1 tbs Dijon mustard
- 1 tbs maple syrup
- 4 tbs olive oil
- 1 tbs lemon juice
- 1 1/2 tbs apple cider vinegar
- Salt and pepper to taste (the dressing is so flavourful you won’t even miss the salt if you want a low sodium option)

Steps:
- Mix the Dijon and maple syrup with a fork until fully combined
- Add in olive oil, lemon juice apple cider vinegar and salt and pepper, mix well until mixture is fully emulsified

A few slurps of fresh, clear sap cured our dry mouths today!
Shhh 🤫. Don’t tell dad! Haha!

Bush “tear down” day!
Sap is still running clear, but two things: we’ve made as much as we typically like to make, and- the bush is really dry and susceptible to flying sparks from our sizeable wood-burning evaporator.
See ya next winter! 🫶🏻 🍁
