Made these sweet potato canelés for a friend.

I’ve always liked taking classic techniques and putting a little of my own spin on them. The sweet potato adds a nice depth without taking away from what makes a canelé a canelé crispy, caramelized outside and soft in the middle.

One of my favorite pastas to make agnolotti.

I first learned how to shape these from The French Laundry Cookbook, and later from watching @j.mizukami make them. Whenever I’m shaping agnolotti, I think about how much those two have influenced my cooking and my path as a chef.

Now seeing my cooks learn to shape them brings me just as much joy. It’s the little things like this that remind me why I love cooking and teaching.
