@russelling loves fruit desserts, so little d and I decided to make him a lemon-blueberry tart for his birthday. We used @zenbelly’s grain-, gluten-, and refined sugar-free recipe, and it is FANTASTIC.

Here’s the recipe:
https://www.zenbelly.com/blueberry-lemon-tart/

We made a few small changes:
* Ghee in the crust instead of coconut oil
* Heavy cream instead of coconut cream and maple syrup instead of honey in the filling
* Added a pinch of salt to the filling

As the recipe warns, we had a bit of extra filling. We put the blueberries in the crust first and then poured in the filling, had maybe 1/3 to 1/2 cup extra (using a 9-inch tart pan).

The recipe is easy, and the result is so, so delicious! Lots of flavor, perfect texture, not too sweet. We loved it.

Go make this one! Really fun to do with a kiddo, too, lots for them to do. 💜

I am *trying* to get in the habit of every Monday being the day where I focus on only my home and tackle meal prep, cooking/baking, getting my to-do lists together, cleaning, any laundry that needs to be done, etc. ❤️🏡

I am going to *try*🤞🏼not to do any work on these Mondays (okay today I’ve got emails to send/schedule but that’s it! Lol) and just focus on preparing for the week ahead. I am totally one of those that stresses & struggles to get any work done if there are things needing to be done around the house.

Not to mention, aside from being a wife and mom, being “Susie Homemaker” is my FAVORITE thing ever! I might even put on a vintage apron ❤️

Do you take a day to focus on getting things done to prep for your week? Is meal prepping a thing you do & love?

What a weekend!! Bringing friends together to meet for the first time was pure magic. I could not have asked for a better two week celebration of turning 50. I have felt so much love from friends near snd far wishing me a Happy Birthday and know every single one of you was in my hearts and thoughts all weekend long even if you weren’t physically with us . Who knew I would find my happy place and so much peace in Guerneville. 50 is starting off just perfect and feeling so much gratitude for all of you who have called me friend. I love each one you with all my heart ❤️ big love to this motley crew of my “ number #1” besties!
