Do you think buying a whole cow is worth it? The one I purchased was on the pricier end I suppose. I paid $5.5k for a grass fed and finished cow from a regenerative farm. It was delivered to my home along with a deep freezer. All in all I got around 470 pounds of meat plus organs, bones, fat, and suet. Here’s the breakdown: 40% of the cow was ground beef, which was around 190 pounds. It was a mix of 90/10 and 80/20 ground beef. Here’s what the remaining 60% of the cow consisted of: - Round steaks (13) - Flank steaks (4) - Flat iron steaks (4) - Skirt steaks (4) - Bone in rib steaks (6) - Sirloin steak (9) - Filet (6) - Delmonico (14) - Boneless ribeyes (12) - KC Strips (6) - Sirloin tip steak (3) - Picanha steak (4) - Bavette steak (2) - Porterhouse (6) - Tbone (4) - Roasts (8) - Brisket (3) - Tri-tip (3) - Short ribs (12) - Eye of round (2) - Chuck eye (8) - Ossobuco (4) The weights vary, but thats the number of each cut I got. I found beef in Arizona with fat so yellow it looks like butter. This is Natural Grocers. The beef here looks different than anything in your regular grocery store and there’s a reason. The fat is yellow. Not white. Not pale. Yellow. And that color tells you everything about what that cow ate. Yellow fat means the cow was 100% grass-fed and grass-finished. It ate grass and forage its entire life which is rich in beta-carotene — the same carotenoid that gives carrots their orange color. That beta-carotene stores in the fat and turns it yellow. It’s a visual indicator that the cow ate what cows are designed to eat. You’re looking at proof of a clean diet in the color of the fat. White fat means the cow was fed grain, corn, and soy in a feedlot. Those feeds contain zero beta-carotene. The fat stays white because there’s nothing nutritious stored in it. The cow ate the same soy that contains phytoestrogens mimicking estrogen in your body. Whatever the cow ate you are now eating. If the cow ate soy you’re eating soy through the meat. The label says grass-fed. The fat is white. You got scammed. Yellow fat beef is also higher in omega-3s, CLA for fat loss and lean muscle, vitamin A, vitamin E, and vitamin K2. The nutritional difference between yellow fat and white fat beef isn’t small — it’s a completely different food. Next time you buy a steak look at the fat. If it’s white the cow ate soy and corn.
