My first time eating at a Mennonite restaurant. Anna Mae’s in Millbank, ON was sent in by you hundreds of times and I finally made the trip. What an experience.

Back-to-back miscarriages was definitely not in my plans.
Renovating a repossessed house, that probably should’ve been burned to the ground, 😬 and turning it into the house we would live in for the next 10 years? Wild in my mind.
Having two beautiful boys? A dream come true.
12 year-old me realizing that I would end up marrying a Mennonite boy. That definitely would have taken this Baptist girl for a trip. 😆

i was surrounded by mennonite people - but somehow there seemed to be nothing inherently mennonite about us. there was a food, an old way of dressing and a language but somehow - as a young child - it all felt shameful. communally we tended to look down on those who were “more mennonite” than we were. the worst was to be mexican mennonite and have a thick german accent.
this story here about feeling that my art had no value is so funny to me now - because before i left for my travels i decided to actually put off art until i could find a “use” for it.
mennonites are - at the core - a very practical people. we are hard working, compassionate, caring, and exceptionally practical.
when i started learning more about mennonite floor patterns that surprised me because of how - un-practical - it is to keep the floor nice with paint. but ill tell that story another day.

Spinach Sourdough Bread Recipe🥖
🥬 Шпинатний хліб на заквасці
🧾 Інгредієнти
• 330 г борошна
• 100 г активної закваски
• 130 мл води
• 70 г свіжого шпинату
• 6 г солі
• 10 г олії
🥣 1. Підготовка шпинатної суміші
1. Збити шпинат із водою в блендері/ або погружним блендером до однорідності.
2. Використовувати цю суміш як рідину для тіста.
🥖 2. Замішування тіста
1. Змішати:
- шпинатну рідину
- олію
- сіль
- закваску
2. Додати борошно, перемішати.
3. Замісити до однорідного тіста.
⏳ 3. Перша ферментація
Тривалість: ~3 годин при кімнатній температурі
• Кожні 30–60 хв робити складання тіста (stretch & fold)
• Усього 3–4 складання
👉 Це формує структуру і пухирці
❄️ 4. Холодна ферментація (за бажанням)
• Поставити тісто в холодильник на 8–12 годин
• Покращує смак і структуру
🔄 5. Формування
1. Дістати тісто
2. Сформувати хлібину
3. Викласти в кошик або миску
⏳ 6. Розстоювання (друга ферментація)
• 1–2 години при кімнатній температурі
або
• одразу після холодильника можна пекти
🔥 7. Випікання
1. Розігріти духовку до 230–250°C
2. Перекласти тісто, зробити надріз
3. Випікати:
• 20 хв під кришкою (або з парою)
• ще 20–25 хв без кришки
❗️ Важливо
• Дати хлібу повністю охолонути перед розрізанням
• Інакше структура буде “гумова”
