The secret is simple: dry scallops, a hot pan, and leaving them alone long enough to get that golden crust. Finish with a quick pan sauce and suddenly dinner feels restaurant-level — without leaving your kitchen.
This is one of my favorite “looks fancy, takes minutes” meals.

This is one of those dinners I lean on when I need something quick… but still nourishing.
These scallops are from my cookbook — and they’re one of my favourite “staple” recipes because they’re simple, flavourful, and come together fast.
That’s really the heart of the cookbook.
Not complicated meals.
Not fancy techniques.
Just real, balanced recipes you can rely on — and easily turn into something like this pasta in under 30 minutes.
Good food doesn’t have to be overwhelming.
It can be simple, satisfying, and still feel special.

I’m crazy about shrimp cooked in white wine and garlic, but I never have wine at home. So what to do?? Well, create a version without it, of course!
And you know what? Skipping the wine was somehow the way to create the most authentic tasting version (to me). Try it yourself, it’s so gooood you’ll be licking the pan… just let it cool down first 😉

Ingredients:
1 - 1.5 lbs scallops (about 15-20 pieces)
Kosher salt
Cracked Black pepper
2 tbsp butter
2 tsp minced garlic
1 large shallot, finely diced
1/2 cup dry white wine
3/4 cup half and half
2 cups baby spinach
3/4 cup fresh grated gruyere cheese
2 tbsp freshly chopped basil or Italian parsley
Instructions:
1. Pat scallops dry with paper towels. Season each side with evenly kosher salt and cracked black pepper.
2. Heat a large skillet over medium heat. Add butter and heat until just melted. Add in the scallops with 1 inch or so between each piece. Cook on each side for 3-4 minutes or until each side is golden brown and crusted. Remove from the skillet and onto a plate or shallow bowl.
3. Add the shallots to the pan and saute for 3-4 minutes or until the shallots are soft. Add the garlic and cook for 1-2 minutes or until fragrant. Add the white wine to the pan and scrape the bottom of the pan to deglaze. Allow the wine to reduce in half.
4. Add half and half and stir together. Bring mixture to a gentle simmer. Add in the spinach and stir together. Cook for 2-3 minutes or until the spinach is wilted. Add kosher salt and cracked black pepper to taste. Add in the gruyere cheese and stir together. Simmer sauce until the cheese has melted. Use extra half and half as needed if the sauce becomes thick.
5. Add the scallops and their juices back into the pan and gently nestle them into the sauce. Mix the sauce slightly and garnish with chopped Italian parsley.

Pan Seared Scallops. Date night dinner.
Serves 2
3-4 large fresh scallops per person
Sweet & Spicy Glaze (below)
Broccoli rabe
Glaze:
1 1/2 tablespoons @Divina Market Calabrian Chili Orange Spread
1 tablespoon soy sauce
1 tablespoon honey
1 clove garlic, grated
1 tsp lemon juice
1 tablespoon unsalted butter (added at end)
1 medium sweet potato oven roasted for 75 minutes in foil with several slits cut into it
Flakey sea salt @Maldon Salt
4 tablespoons unsalted butter
1/3 cup chicken stock or vegetable stock
Cracked Pepper
1. Roast sweet potato and combine with butter and stock. Gently mash and place in a sieve then push through leaving solids behind until smooth consistency. Taste and adjust seasoning. Set aside and rewarm before serving.
2. Make glaze by combining all ingredients, except butter, over medium low heat and bringing to a low boil. Let it cool slightly and set aside. Add butter before glazing scallops.
3. Season broccolini with lemon zest, olive oil, flakey sea salt and pepper. Cook in a hot skillet until tender but not mushy.
4.Pat scallops dry and season well on both sides with salt and pepper. Add to a hot skillet with a little bit (not too much) of canola or high temp oil. Sear without moving then flip and begin basting with glaze. Baste both sides. Cook for only 2-3 minutes until center is just barely cooked through. Remove from pan.
Serve on sweet potato purée with broccoli and more sauce.
