Very festive and very scrumptious. These Orange Pink Peppercorn Shortbread cookies with Pistachio Buttercream are a taste sensation that cannot be ignored.
Crushed pink peppercorns with their fruity flavor are paired with fragrant orange zest in a buttery shortbread and filled with a silky pistachio buttercream.
Not quite stuffed cookies, but certainly stuffed full of deliciousness (!!) I’m posting these for today’s “stuffed cookie” #cbcbakealong hosted by the very talented Jen @cookingbychapter.
I took the liberty of rolling out the shortbread with a patterned rolling pin for some Holiday glow-up, and you can find the recipe @thejamlab

Old Fashioned Apple Walnut Cake with Vanilla Custard Sauce
from Big Heart Little Stove cookbook by Erin French @thelostkitchen
Posting for our #cbcbakealong —the battle of apples vs pumpkins and had to side with apples even though I have no harsh feelings for pumpkins.
Since end of the month is near, I am also posting for flavor of the month theme with #rainydaybitescookbookclub as It is apples too!
This was the perfect apple cake and the best vanilla custard sauce. Definitely screamed fall with all the spices.

Finally got around to some Xmas baking! These are my Xmas vanilla shortbread cookies and for my first attempt, I’m really happy with them! Pan-Banging Sugar Cookies ✨🎄
Baking spirits bright with this month’s #cbcbakealong challenge: @sarah_kieffer cookies.
I thought the term “pan-banging” meant something like “really amazing”. “Those were some pan-banging sugar cookies!”
No. 😂 The crispy ridges are created by banging the baking pan against the oven rack various times. Such an interesting (and loud) method!
These sugar cookies are certainly “pan-banging” but they’re also “really amazing”. Ha!

What a way to greet the coming autumn season than with this Cinnamon Apple fritter cake! Yum!
This is my introduction bake to the #cbcbakealong collab which has intrigued me for months. Low stress baking at its finest. (Doesn’t hurt that it’s hosted by a cool Canadian 😉 @cookingbychapter )
The theme was a bake from @scientifically.sweet and it had couldn’t be round…

It’s Frosted February for the #cbcbakealong challenge, choosing any recipe from @bromabakery that fits. She has so many, it was hard to choose.
I chose her Persian Love Cake (the name alone got my attention), which combines Almond flour with regular AP flour, Cardamom, and Rosewater. Topped with a confectioners glaze, and pistachios and rose petals. It is a rich, moist and fluffy cake.
I am moving away from big cakes to single layer cakes, it helps keep that baking therapy going and also helps with not too many sweets in the house.

I don't like (or need) to trick kids into eating vegetables but I did get a perverted sense of satisfaction from having two six year olds asking for second helpings of this zucchini chocolate cake. I know at least one of them would have complained had he known.
There was no way of telling! It was brilliant. Rich and nutty from all the cocoa, chocolate. Super moist.
I would happily bake this in a round tin and spread some cream over, serve it to guests. Even real chocolate lovers like @cookingbychapter.
#cbcbakealong
140g all-purpose flour
40g unsweetened cocoa powder
3/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
70g 52% cocoa chocolate chopped into small pieces
2 large eggs, room temperature
60ml oil (coconut is amazing, but any oil will do)
90g sour cream
100g brown sugar
1 tsp pure vanilla extract
2 tsp rum
1 and 1/2 cups (185 to 200g) shredded zucchini (no need to squeeze out the moisture)
I mixed sugar and the rest of wet ingredients really well by hand and poured them into the dry ingredients. Shredded zucchini was mixed in at the very end.
Baked in a lined loaf tin ( for 45 min at 180C. Mine was 20cmx 10cm.
It needs to cool for a couple of hours before cutting into it.
When you want an apple fritter but don't want to deep fry anything... 🍎🍰
For this month's #CBCBakeAlong challenge, hosted by the lovely Jen at @cookingbychapter , we are "cutting corners" - we were asked to make something baked in a square pan from the amazing Christina Marsigliese @scientifically.sweet
I chose the Cinnamon Apple Fritter Cake and WOW.
What drew me to this recipe was how simple it is to put together. A quick cake batter, a cinnamon-sugar mixture, diced apples, and an easy glaze are layered and swirled together before baking. No special equipment, no complicated techniques, and definitely no deep frying!
The result is a soft, buttery cake packed with apples, ribbons of cinnamon sugar, and topped with a sweet glaze that gives it all the flavor of a classic apple fritter. It truly tastes like an apple fritter but without the greasy or heavy feeling that comes from frying. It's really light and delicious and not too sweet at all!
An easy bake with a big payoff, and one I'll happily make again. 🍎🍰

Have a wonderful week
😘💕
I took some liberties with today’s #cbcbakealong which I have never done before. I do think my sweet friend @siftwithkima will forgive me 😊
I had a jar of pistachio cream in my pantry for so long that it actually went just past its best before date. It was $20 and I was not wasting it. That same day, because we know that our phones can read our minds, I saw a tik tok video where a woman suggested pouring it into a pan, freezing it in a thick layer and then sandwiching it between your favourite brownie recipe. I have made @siftwithkima double chocolate brownies before and I knew they were awesome! So I went for it!
I sent these to work with my husband who texted me that the whole pan was gone by 9:20! And I cut them small for maximum sharing. He said people were stopping him to tell him how good they were. And that is all you need to know. Pistachio cream or not, this brownie recipe is a winner every time.
Today we are celebrating one year of baking together. I want to say thank you to everyone who participates, supports our posts or just lets me drone on about it in stories. You know I love to bake, but doing it once a month with awesome friends is always something to look forward to. We would love to have you join us! ❤
Head to my stories later to see the rest of the bakes. Our December theme will be announced on the first of the month 😊
Back in Singapore after my stay with my mother in Japan – I hope to share one or two more posts to share reflecting on my cooking and time there.
Meanwhile, joining #cbcbakealong for the first time, hosted by wonderfully talented Jen @cookingbychapter 💛
This month’s theme was pumpkin vs apple. I love both, but since I had an occasion to bring something sweet, and I thought of just the right quick & east go to recipe, joining team apple.
A rustic autumn pound cake, packed with apples and raisins – I always wonder if the batter can hold so much fruit.
Just mix, bake, and enjoy – wonderfully moist, full of fruit, with the warm aroma of cinnamon.
Perfect alongside a cup of tea.
Ingredients for 17cm loaf tin:
2 eggs
70 g rice oil
80 g beet sugar (brown sugar)
A pinch of salt
Zest of ½ lemon
80 g whole wheat flour
4 g baking powder
2 g cinnamon
140 g apples
100g raisins
Preheat oven to 180°C.
After baking, I let the cake rest upside down for a day, which set the crumb beautifully. The result was tender yet structured – such a delight to slice and share.

VIETNAMESE FISH SAUCE APPLE BABKA
A little grated lemongrass, one star anise and just a teaspoon of fish sauce will truly up level your apple desserts this fall. Don’t knock it until you try it!
This bake was inspired by #greatbritishbakeoff #breadweek. I wasn’t about to build a three tier bread tower because why. But thus this little breadlet was born.

Little Debbie Christmas Tree Cakes 🎄✨
It wouldn’t be the Monday after Thanksgiving without a Christmas treat! And in this case, a very nostalgic one. 🥰
I joined @cookingbychapter’s bake along this month, featuring @grandbabycakes. (and you should too! #cbcbakealong)
Jocelyn’s recipe sandwiches the two cakes between swiss meringue buttercream, totally yum! I attempted this with high confidence, resulting in low success 😆 I need to watch another YouTube video (or three) to perfect the science of swiss meringue buttercream.
Do not fear! The cakes are still absolutely delicious, albeit only one cake and no swiss meringue buttercream.
