The great irony of England borrowing the Genoese flag is that at the start, it wasn’t about shouting identity. It was about hiding it.
When English ships sailed under the cross of St George, captains told their crews to keep quiet as they entered port. No singing. No chanting. Don't give the game away.
How things have changed.
Duke Antonio’s ancestors would later go on to star in the early 2000’s hit show, The Sopranos. But this meme isn’t just some gabagool. As Tony Soprano himself would say, “this is serious.” Constantinople falling to the Turks was an absolute ball busting move for the Genoese and Venetian merchants. Would it surprise you to know that Columbus himself was Genoese? Like most things in life, it came down to dollars and cents.
For centuries, the merchants of Genoa and Venice had been riding the ultimate gravy train. Silk from China and spices from India, of it flowing through Constantinople. They just needed to sit at the crossroads and collect their cut.
Then 1453 happened. The Ottomans took the city and the old Byzantine middleman system was gone. Trade did not stop overnight, but the rules changed. Italian merchants were no longer dealing with a weak empire desperate for allies. They were dealing with a rising superpower. The margins tightened and the gravy train slowed to a crawl.
The question was simple: If the eastern door was narrowing, could you find another one?
Portugal started probing down the coast of Africa, inch by inch, looking for a sea route around Muslim controlled lands. In Genoa, an ambitious mariner named Christopher Columbus pitched a different idea. Reach Asia by crossing the Atlantic.
When Spain finally bankrolled him in 1492, it was not about curiosity. It was about bypassing middlemen and reclaiming lost profits.
The fall of Constantinople did “cause” the discovery of America in many ways. It tightened Europe’s economic arteries. And when money gets squeezed, men get creative.

Black Forest Cake 🎂
Ingredients
Chocolate Genoese (20 cm pan)
* 6 eggs, separated
* 200 g sugar
* 200 g all-purpose flour
* 50 g unsweetened cocoa powder
Whipped Cream Filling & Frosting
* 510 g heavy cream (very cold)
* 250 g mascarpone
* 50 g powdered sugar
* Seeds from ½ vanilla bean
For Assembly
* Kirsch syrup (to soak the cake layers)
* Kirsch cherries, well drained
* Chocolate shavings (for decoration)
Instructions
Chocolate Genoese
1. Preheat the oven to 180°C (350°F). Line a 20 cm round cake pan with baking paper.
2. Separate the egg whites from the yolks.
3. Whip the egg whites with an electric mixer. Once they begin to foam, gradually add the sugar while whipping until a light, glossy meringue forms.
4. Add the egg yolks and continue mixing briefly until combined.
5. Sift together the flour and cocoa powder. Gently fold them into the batter using a spatula, lifting the mixture carefully to keep it airy.
6. Pour the batter into the prepared pan and smooth the top.
7. Bake for about 1 hour, or until a knife inserted into the center comes out clean.
8. Remove from the oven, unmold while warm, wrap the sponge in plastic wrap, and let it cool completely overnight.
9. The next day, slice the sponge horizontally into three equal layers.
Whipped Cream
1. In a large bowl, combine the heavy cream, mascarpone, powdered sugar, and vanilla seeds.
2. Whip with an electric mixer until firm, smooth, and stable.
Assembly
1. Place the first sponge layer on a serving plate and generously soak it with kirsch syrup.
2. Spread a layer of whipped cream on top, add a small mound in the center, and scatter over the drained cherries.
3. Place the second sponge layer on top, soak with syrup, and repeat the cream and cherry layer.
4. Top with the final sponge layer and soak lightly.
5. Cover the entire cake with the remaining whipped cream, smoothing the top and sides. Reserve some cream for decoration.
6. Press chocolate shavings onto the sides of the cake and decorate the edges with the reserved whipped cream.

TORTA ZENA• A classic of the Genoese pastry tradition from the 1800s, created as an homage to the city by the Klainguti brothers — Swiss pastry chefs who settled in Genoa. 🇮🇹 The story says they missed their boat and ended up staying in the city.
This cake is made of soft genoise layered with maraschino mousseline and Italian buttercream flavored with hazelnut and rhum, all wrapped in delicate almond paste. Elegant, aromatic, and deeply rooted in the sweet heritage of our land and city.
