INGREDIENTS: 2 pounds of fresh tomatoes (any variety) 3 cloves garlic 1 yellow onions, sliced 1/2 cup extra-virgin olive oil Salt and freshly ground black pepper 4 cups chicken stock 1/2 cup chopped fresh basil leaves (optional) 1/2 cup heavy cream (optional) DIRECTIONS: 1. Preheat oven to 450 degrees F. 2. Wash and cut the tomatoes in half. Spread the tomatoes, garlic cloves and onions onto a baking tray. Drizzle with 1/2 cup of olive oil and season with salt and pepper. 3. Roast for 30-40 minutes, or until caramelized. 4. Transfer ingredients to a large stock pot. Add chicken stock and bring to a boil. Reduce heat and simmer for 20 minutes. 5. Add basil leaves to the pot. Blend the soup until smooth. 6. I got two complimentary @oddbunchcanada boxes recently and honestly, loveeeeed how much produce comes in just a Small Box (Mixed) 📦 It’s technically meant for one person per week, but it was easily enough for both Mr C and I — and I even shared extra fruits and veggies with family because one box alone was a lot! If you’re new to Odd Bunch…they rescue perfectly good produce that grocery stores don’t take because of sizing, shape, or cosmetic “flaws”. Instead of letting it go to waste, they pack it into weekly subscription boxes and send it straight to your door 📦 The produce is still fresh, flavourful, and completely usable — just a little quirky!
