The next time you bring home the giant package of ground beef, go ahead and prep these 2 recipes. If you open my fridge you’re pretty much always likely to find beef summer sausage and taco meat…they just work so well for quick and easy lunches and snacks!
I cannot begin to tell you how many times I’ve made this homemade beef summer sausage…it’s loved by MANY of you and for good reason!
Homemade Beef Summer Sausage
2 lbs. medium lean ground beef (80-85%)
2 tablespoons Morton Tender Quick Salt
1/2 teaspoon garlic powder
1 tablespoon mustard seed
2-3 teaspoons coarse ground pepper (I do 2 teaspoons so my kids don’t think it’s ‘too spicy’)
1 tablespoon liquid smoke
1 tablespoon granulated sugar
Place all ingredients in a large mixing bowl (I used my stand mixer), and thoroughly combine.
Divide the mixture in half, wrap each portion with plastic wrap and try to make a log shape that is about 6-7” long. I like to double wrap mine.
Place in a container in your fridge for 24 hours….then unwrap the logs and place them on a sheet pan to bake for 2 hours at 275ºF.
Remove from oven, cool in the fridge, and slice to enjoy!

In case you’re catching up from part 1…I posted yesterday that my Christmas gift to you is to test my viral beef summer sausage recipe with ground chicken.
I’m not personally a huge fan of ground chicken, so I was SHOCKED by how GOOD the final product tasted!!!
Here’s the full recipe for ground chicken summer sausage:
I mixed 1 pound ground chicken with the following:
1.5 teaspoons Morton Tender Quick
1/2 teaspoon garlic powder
1/2 tablespoon mustard seeds
1 teaspoon liquid smoke
1 teaspoon sugar
Lots of cracked black pepper
A dash of poultry seasoning
Mixed it well and rolled into a log. This sat in my fridge for 24 hours, then I cooked it at 275°F for 2 hours. If you’re worried about internal temp, my instant read thermometer said 190°F when I probed the meat after 2 hours.

I’ve been incrementally improving my family’s diet and one of the things I’ve been doing is increasing their protein intake. This recipe is super tasty and I make it for my kids’ lunches every week. I got it from @homebeginswithlove
Homemade Beef Summer Sausage
2 lbs of lean ground beef (80-85%)
2 Tbsp of salt
½ tsp of garlic powder
1 Tbsp of mustard seed
1 ½ tsp of ground pepper
1 Tbsp of liquid smoke
1 Tbsp of sugar
Mix all the ingredients, then divide the mixture in half and form each half into a log (8-9 inches). I like to wrap mine in parchment paper to help make the shape. Then let marinate in a container in the fridge for 10-24 hours. Finally bake at 275 degrees F for 2 hours, and enjoy.
Store in the fridge for up to a week or in the freezer for up to 3 months.

You don’t need a grinder.
You don’t need casings.
You don’t need a butcher shop in your garage.
You just need pork… and the confidence to Rub Yer Meat. 😏🔥
These homemade cheddar sausage links are boiled to set, seared in butter, and built to be customized however you like. Breakfast. Pasta. Sandwiches. Straight from the skillet. We don’t judge.

Ground Beef Vegetable Soup
I don’t follow an exact recipe…it’s really just a clean out the fridge ‘method’. Here’s what I used this week: 2 pounds ground beef, onions, carrots, garlic powder, some leftover roasted potatoes, celery seed, salt, pepper, Italian seasoning, beef broth, and canned tomatoes, frozen peas, and frozen corn
#hbwl #homemade #proteinprep #costco
Recipe below:
Sausage & veggies with gravy
-8 sausage links (fully cooked or not) I used @makeititalian mild & sundried tomato basil
-baby potatoes halved
-3 carrots sliced thin longways
-2 bell peppers
-1 onion
-asparagus
-3-50 cloves minced garlic
-avocado oil
-some dashes of seasonings (salt, pepper, ground thyme, dried chives, dill, smoked paprika)
-3 tbsp melted butter
-3.5 tbsp AP flour
-2 cups broth or 2 cups of water and 2 tbsp better than bouillon
-roasting dish, something that will keep everything a bit compacted together! You don’t want everything loose and swimming in a pan. I like to use any of my 8x8, 9x9 or my 9” glass round pan.
1.) set oven to 375
2.) Toss all your veggies in oil and seasonings (you can do this in a bowl or straight inside of your roasting dish). Add to your roasting pan if you haven’t done so.
3.) mix melted butter & flour (I like to use my large glass measuring cup so I can melt the butter and mix in the other flour straight in). Then slowly add your broth and whisk (I sometimes will just use water and a couple tbsp of better than bouillon).
4.) pour gravy mixture directly over veggies in roasting pan.
*If your sausages are uncooked, add them to the top of your veggies now and nestle them in! Bake for 45 minutes.
*if your sausages are fully cooked, roast your veggies in your oven for 25 mins, then add your sausages and cook another 20 minutes.
