If you cut corners , Scrimp n scrape with food, then you're not only cheating your customers, you are cheating yourself and harming your name & reputation. When you provide for large events, there will inevitably sometimes be millionaires or billionaires there who can taste what good quality food is. Always use fresh products and always use best quality meats. These two formulas together will give the best taste possible to another's taste buds. by @takedownarrows

Chiffonading your greens into small shreds makes them look a lot nicer visually and also a lot harder to choke on. This is why I also do this with all lettuce, too, as many people have had some scary moments with lettuce, so i hear.

Here I am chiffonading some Basil. Just put a few leaves together and roll them up. Always keep your fingertips in using the claw method of cutting. Fluff out the cut leaf into nice ribbons and serve.
