Summer, served fresh 🍉🌿🍋

Watermelon, preserved lemon, feta, fresh herbs, toasted hazelnuts and extra virgin olive oil.

Paired with a refreshing watermelon, lime & mint tonic.

Pan con tomate on hazelnut bread, burrata, Iberico ham and a fresh summer salad.

For 2 people:

2 thick slices of hazelnut bread
2 ripe Marmande tomatoes
1 small garlic clove
3 tbsp good olive oil
A few basil leaves
80 to 100g Iberico ham
1 burrata
A little garlic and thyme infused olive oil
Sea salt and black pepper

Toast the hazelnut bread, rub it gently with garlic, then top with grated ripe Marmande tomatoes, olive oil, basil, salt and pepper.

Add the burrata, Iberico ham and finish with a drizzle of garlic and thyme infused olive oil.

On the side, a fresh salad with frisée, thinly sliced radish, pomegranate and grated Zephyr zucchini.

Dressing: preserved lemon, preserved lemon oil, wholegrain mustard, balsamic vinegar and olive oil.

Simple, fresh, generous. Exactly the kind of summer plate I love.
